Spicy Thai Peanut Chicken Spring Rolls

  • 1 chicken breast, cooked and shredded
  • 1 cup spicy peanut sauce
  • 1 bell pepper
  • 1 cup shredded baby salad greens
  • 5 sheets of rice paper
Instructions
  1. Mix the spicy peanut sauce with the shredded chicken. Set aside.
  2. Slice the bell peppers into long strips. Use different colored bell peppers for a colorful fresh spring roll. Set aside.
  3. Fill a shallow bowl with hot water. Dip a sheet of rice paper into the water in order to soften it. The sheet should still hold its shape when removed from the water (leave them in the water too long and they will be difficult to work with). Lay the sheet down on a wet surface, rough side up. Place the salad greens, bell pepper strips, and peanut chicken mixture on the rice paper. Fold the bottom over the ingredients, followed by the sides. Roll up the fresh spring roll and enjoy!
  4. Serve with extra peanut sauce for dipping.
Notes
I usually cook chicken in a crock pot and shred it using my Kitchenaid mixer. It's a great trick for shredding a lot of chicken quickly!
Rolling fresh spring rolls takes some practice. They will rip, stick, and get messy, but they will always still taste great! Enjoy!
