Homemade Crab Sushi

Ingredients
  • 1 cup short grain sushi rice
  • 1½ cup water
  • ¼ rice vinegar
  • 1 tbs. sugar
  • dash of salt
  • 4 sheets of nori
  • ½ cucumber, julienned
  • 1 avocado, sliced
  • 5 tbs. cream cheese
  • 2 sticks of imitation crab, sliced
  • ⅓ cup lump crab meat
  • 2 tbs. mayo
  • 1 tbs. sriracha
  • sprinkle of sesame seeds
Instructions
  1. Cook the rice in water according to package instructions. In a separate bowl, mix the rice vinegar, sugar, and salt together until dissolved. Pour the mixture over the rice and fold together. Set aside.
  2. Mix the mayo, sriracha, and crab together in a small bowl. Set aside.
  3. Cover a sushi mat with plastic wrap. Place a sheet of nori on the sushi mat and spread a thin layer of rice over the nori. You should be able to see the nori through the rice. Flip the nori sheet over so the rice is facing the sushi mat. Place the cream cheese, cucumber, avocado, and imitation crab, crab mixture in a row about 1 inch from the bottom of the mat. Using the mat, roll the sushi up tightly. Repeat varying the ingredients.
  4. Add avocado, fish, or sesame seeds to the top of the rolls. Using a sharp knife, cut the rolls into slices and serve.
Notes
Washing the sushi rice: Pour the uncooked rice into a large bowl and cover with a generous amount of cold water. Using your hands, swish the rice around in the bowl. The water will turn into a murky white color. Drain the water and repeat until the drained water is almost clear. Do not skimp on this step.
