For the Pizza Dough:
  • 1 cup warm water
  • 2¼ tsp yeast (active dry yeast is fine)
  • 2 tbs olive oil
  • 2 tsp salt
  • 1 tbs honey (or sugar)
  • 3½ cups bread flour
  • ⅓ cup barbecue sauce
  • ½ red onion
  • 12 oz. grilled chicken
  • 1½ cup cheese (smoked gouda, mozzarella, etc.)
  • 4 slices of crispy bacon
  • fresh herbs
  • salt and pepper to taste
For the Pizza Dough:
  1. Using a stand mixer and a dough hook, mix the dry active yeast and honey with the warm water. Let sit until the yeast starts to bubble (at least 10 minutes). Add the oil, salt and 2 cups of the bread flour. Start mixing the ingredients together on a low setting. Slowly add more bread flour until the dough is the correct consistency (just enough so the dough is no longer sticky). Knead the dough for about 5 minutes.
  2. Grease a bowl and add the dough. Cover with plastic wrap and let it sit in a warm place for 1½ hours. The dough should have doubled in size.
  1. Preheat the oven to 500 degrees.
  2. Roll out the pizza dough onto parchment paper. Brush a generous amount of barbecue sauce onto the dough. Add the cheese and remaining toppings. Drizzle with additional barbecue sauce. Place the pizza with parchment paper onto a hot pizza stone or overturned cookie sheet. Bake for 10 minutes, or until brown.
Tip: You can use a rotisserie chicken from the grocery store if you want a shortcut!

Using all-purpose flour will produce a crust that is much more flat and dense. Bread flour is high in protein which leads to a lighter, chewier crust.
