Breakfast Oatmeal Bars

These oatmeal bars are completely customizable and great for mornings on the go. I usually make a batch on Sunday nights so we’ve got breakfast all week. However, it’s difficult not to eat half of them as soon as I pull them out of the oven. It’s hard to resist these chocolatey, crumbly bars.

Ingredients
  • 2 cups oat flour
  • 1 tsp. baking soda
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 tsp. cinnamon
  • 4 tbsp. unsalted butter, softened
  • 1 cup light brown sugar
  • 3 eggs
  • ½ cup natural applesauce
  • ½ cup honey
  • 1¼ tsp. vanilla extract
  • 4 cups oats
  • 1½ cups of chocolate chips, crushed nuts, dried berries, raisins, etc.
Instructions
  1. Mix the oat flour, baking soda, baking powder, salt, and cinnamon together in a small bowl and set aside.
  2. In a stand mixer, whip the butter and light brown sugar together. Add the eggs, honey, vanilla, and applesauce and mix well. Next, add the oat flour mixture slowly until just incorporated. Do not overmix. Add the chocolate chips, dried berries, etc. and stir with a spatula. Add the oats until just combined.
  3. Pour the mixture into 2 buttered springform pans (for easy removal). Bake for 25 minutes at 325 degrees or 20 minutes at 350 degrees. Remove and let cool completely before cutting.
