As I mentioned in my Slow Cooker Teriyaki Chicken post, this week has been filled with crock pot recipes and I’ve loved every forkful of it! Although my fiancé’s favorite recipe was the teriyaki chicken, I’m partial towards this super creamy Chipotle Crock Pot Chicken.
I used chicken tenderloins since they were on sale, but you may use chicken breasts as well. If you want to leave the chicken pieces whole, just drizzle a bit of the extra sauce over the chicken. Or you may shred the chicken and place it back into the slow cooker to soak up additional sauce. Then, serve it over rice or quinoa.
As with any crock pot recipe with cream cheese, the sauce will have to be stirred to remove any lumps. You can either preheat the sauce and stir until the cream cheese is incorporated or stir vigorously after the chicken is cooked. If you wait, remove the cooked chicken and whisk the sauce until the cream cheese lumps are gone.
If you are worried about the heat, start by adding only one minced chipotle pepper and a tablespoon of the adobo sauce. After the chicken is fully cooked, taste the sauce. At this point, add any additional peppers to your liking. It is easier to make the dish more spicy rather than reducing the heat at the end.
For a spicier chipotle crock pot chicken, use at least three minced chipotle peppers with a tablespoon of adobo sauce.
This dish makes wonderful leftovers as well. The flavors always seems to enhance the longer the dish sits in the fridge.
I love adding shredded chicken to lettuce wraps for a light lunch.
Shredding chicken by hand is a lot of work, so I always shred it using my mixer. It take 15 seconds and you’re done.

- 1 lb. boneless, skinless chicken (breasts or tenderloins)
- ¾ cup chicken broth, low sodium
- 1 can condensed cream of chicken soup (10¾oz.)
- 3 cloves garlic, minced
- 2-3 chipotle peppers in adobo sauce
- 1 tbsp adobo sauce
- 8 oz. cream cheese (1/3 less fat)
- salt and pepper, to taste
- Add all of the ingredients to a large crock pot and stir. Cook on low for 4-6 hours or on high for 3-4 hours.
- Serve over pasta or rice.
