My waffle iron gets a lot of use in my kitchen. However, it’s been years since I’ve put waffle batter in it.

I’m constantly adding different ingredients to my waffle iron to see what happens. I started with some simple waffle iron hash browns, but have moved on to crazier things like waffle iron pizzas and baked goods. When I saw that I had a few leftover sweet potatoes, I knew exactly what I wanted to do with them.

With a touch of cinnamon and apples, these sweet potato waffles are perfect for a cold winter morning. As an added bonus, these waffles are a lot more nutritious than classic waffles.

I’m absolutely in love with my spiralizer. When I bought it, I had no idea that I would use it so often. I figured it would be similar to a bread machine-something that you tend to forget about until you have to clean around it. However, I think it’s safe to say that I use my spiralizer more than any other kitchen tool.

Not only can it be used to replace pasta in dinner dishes, but it can be used for making breakfasts, snacks, salads, rice, or even desserts!

To ensure that the sweet potatoes cook through, I precook them in a skillet while the waffle iron heats up. This way, the sweet potatoes become soft and creamy, but the waffle iron still gives them a nice golden crust.

The apples will become nice and soft in the waffle iron, so there is no need to cook those beforehand.

You may either spiralize or grate the apples using the large holes on a grater. If you decide to spiralize the apples, just keep your eyes open for the seeds or any seed fragments and pick them out. Grating the apples allows you to grate around the core, but does dirty up another kitchen tool.

You can either top these Cinnamon Apple Sweet Potato Waffles with maple syrup for a sweet breakfast or a fried egg for a savory breakfast. My favorite is the fried egg version, but I’m a little partial towards a runny egg. I think I could add an egg to almost anything.

Ingredients
  

  • 1 apple
  • 1 large sweet potato, spiralized
  • 1 tsp cinnamon
  • 1 egg, lightly beaten
  • cooking spray

Instructions

  • Preheat a waffle iron.
  • Spray a medium-sized skillet with cooking spray and heat over medium-high heat. Add the spiralized sweet potatoes to the skillet and cook until tender, stirring frequently. Cook until the sweet potato noodles have softened, about 8 to 10 minutes.
  • While the sweet potato noodles are cooking, grate the apple using the large holes on a grater (you can also spiralize the apple, but be sure to pick out the seeds). Add the grated apples to a medium-sized bowl. Add the cooked sweet potatoes, cinnamon, and the egg. Toss until combined.
  • Spray the hot waffle iron with cooking spray, then add half of the sweet potato mixture. Cook the waffles until the sweet potatoes are golden brown, about 8 to 10 minutes (will vary depending on waffle iron). Repeat with remaining sweet potatoes.
  • Serve immediately with your favorite toppings.
