Kid-Friendly English Muffin Mini Pizzas

A new little pizza place just opened up in town, so we decided to order a pizza loaded with toppings. We don’t have pizza often and after eating a few too many slices I realized why. We felt so sick and lethargic for hours after having the pizza. I don’t know if it was the mound of cheese or the dough that did us in, but it definitely inspired this English Muffin Mini Pizza recipe.

Kid-Friendly English Muffin Mini Pizzas

Unlike regular pizzas, these English muffin mini pizzas have built-in portion control. It’s so easy to say “I’ll just have another slice” after ordering a large pizza. But with these mini pizzas, everyone can make their own and there won’t be lots of extra slices sitting out. Best of all, you get all of those awesome pizza flavors without the extra calories.

That’s a win-win.

English Muffin Mini Pizzas

This is also a kid-friendly recipe. It’s great for parties and sleepovers since everyone can build their own. For this recipe, I made one English muffin pizza with pepperoni and mozzarella and the other with pesto and goat cheese. To really boost the nutritional value, I used whole wheat English muffins with double fiber.

Kid-Friendly English Muffin Mini Pizzas

You can also top the mini pizzas with mushrooms, bell peppers, onions, spinach, olives, sausage, ham, or chicken. Honestly, that list can go on and on. I bet you already have lots of great toppings already in your refrigerator!

English Muffin Mini Pizzas

Serves: 4 mini pizzas
Ingredients
For Pepperoni Mini Pizzas:
  • 2 English muffins, split
  • salt and pepper, to taste
  • ¼ cup pizza sauce
  • 1 cup mozzarella cheese, shredded
  • 12 slices pepperoni
  • ½ tsp red pepper flakes (optional)
For Pesto-Goat Cheese Mini Pizzas:
  • 2 English muffins, split
  • salt and pepper, to taste
  • 2 tbsp pesto
  • 2 oz goat cheese
  • 1 roma tomato, diced
Instructions
For the Pepperoni Mini Pizzas:
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Spread 1 tablespoon of the pizza sauce over each half of the english muffin. Add red pepper flakes, if desired.
  3. Top each English muffin half with a quarter of the mozzarella cheese and 3 slices of pepperoni.
  4. Bake in the preheated oven for 15 to 18 minutes, until the cheese is bubbly.
For the Pesto-Goat Cheese Mini Pizzas:
  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Top each English muffin half with ½ tablespoon of pesto, 1 tablespoon goat cheese, and a quarter of the diced tomato.
  3. Bake in the preheated oven for 15 to 18 minutes, until the cheese is bubbly.

I love the idea of English muffin pizzas! So perfect for portion control. I usually make pita pizzas when I'm after something quick and easy, but the English muffins are even better for cute little healthy pizzas. Thanks for the inspiration!

Pita pizzas sound great too Katie! I love that you can use practically any type of leftover flatbread (or tortillas!) to make pizza.
