Prep Time: 15 minutes
Cook Time: 5 minutes
Total Time: 20 minutes
Servings: 4 pints

Ingredients

  • Bananas: 2 lbs
  • Lemon Juice: 1/3 cup freshly squeezed
  • Brown Sugar: 1/2 cup
  • Bourbon: 2 Tablespoons Alternatively, one may use 1 tablespoon of bourbon flavoring
  • Vanilla Extract: 2 Tablespoons
  • Cinnamon: 1/4 teaspoon ground
  • Allspice: 1/8 teaspoon ground

Instructions

  • Begin by meticulously peeling the bananas. Subsequently, either break them into sections or slice them into uniform pieces.
  • Transfer the banana segments to a blender or food processor. Introduce the freshly squeezed lemon juice and brown sugar into the mixture. Engage the machine until the contents achieve a moderately coarse purée consistency.
  • Transfer the aforementioned purée into a saucepan. Place the saucepan on medium heat and bring the contents to a boiling point, ensuring constant agitation to prevent scorching.
  • Once boiling ceases, remove the saucepan from the heat source. Sequentially introduce the bourbon, vanilla extract, ground cinnamon, and ground allspice into the saucepan. Mix thoroughly until the ingredients are well amalgamated.
  • Decant the finished product into sterilized glass jars, ensuring the contents have adequately cooled before sealing. For optimal preservation and flavor retention, it is advised to store the jars in a refrigerated environment. The product should be consumed within a 14-day timeframe.
