Ingredients

  • 1 cup of All-Purpose Flour
  • 1/4 teaspoon of Baking Soda
  • 1/4 teaspoon of Salt
  • 1 cup of Rolled Oats Old Fashioned
  • 1/2 cup of Light-Brown Sugar firmly packed
  • 1/2 cup of Unsalted Butter softened
  • 3/4 cup of Raspberry Jam seedless variety may be preferred

Instructions

  • Oven Preparation: Initiate by preheating your oven to a temperature of 350 degrees Fahrenheit. Proceed to line an 8-inch square baking dish with aluminum foil, ensuring there is a 2-inch overhang on two opposite sides. This overhang aids in the removal of the bars post-baking. Once lined, lightly grease the foil.
  • Dry Ingredient Mixture: In a sizeable mixing bowl, commence by thoroughly whisking together the all-purpose flour, baking soda, and salt. Following this, integrate the rolled oats and light-brown sugar. During this step, it is imperative to use clean fingertips to disperse any clumps of brown sugar, ensuring a uniform mixture.
  • Incorporating Butter: Proceed to add the softened unsalted butter to the bowl. Employ your fingertips to blend the butter into the dry ingredients. The aim here is to achieve a mixture that is evenly moistened, which will form the crumb base and topping for the bars.
  • Assembling the Base: Transfer approximately 2 cups of the oat mixture into your prepared baking dish. Press the mixture down firmly to form a consistent and even layer. This will serve as the base for the raspberry filling.
  • Adding the Raspberry Layer: Carefully spread the raspberry jam over the oat base, ensuring an even distribution. Maintain a small margin, approximately 1/4-inch, from the edges to prevent the jam from seeping out during baking.
  • Final Layer and Baking: Disperse the remaining oat mixture over the raspberry layer, gently pressing it down to form a crumbly top. Place the dish in the preheated oven and bake until the surface turns a golden brown, which typically takes about 34 to 38 minutes.
  • Cooling and Serving: Upon removal from the oven, it is crucial to allow the Raspberry Crumb Bars to cool completely in the dish. This cooling process is essential for the bars to set properly, facilitating easier cutting into squares. Once cooled, lift the bars out using the foil overhang and cut them into desired sizes. For storage, place in an airtight container.
