  • Carrots: 2 pounds thoroughly washed, scrubbed, and diagonally cut into approximately 3-inch pieces.
  • Butter: 4 tablespoons preferably unsalted.
  • Garlic: 4 cloves finely minced.
  • Italian Seasoning: 1 teaspoon.
  • Salt: ¼ teaspoon or adjust to taste.
  • Fresh Ground Black Pepper: ¼ teaspoon.
  • Grated Parmesan Cheese: ⅓ cup.
  • Fresh Parsley: ¼ cup finely chopped.

Instructions

  • Preheat the Oven: Set the oven to a temperature of 425˚F in preparation for baking.
  • Prepare Baking Sheet: Either grease a rimmed baking sheet with cooking spray or line it with aluminum foil for easy cleanup.
  • Carrot Preparation: Place the previously prepared carrots into a large mixing bowl and set aside for subsequent steps.
  • Prepare Butter Mixture: In a microwave, melt the butter. To the melted butter, add the minced garlic, Italian seasoning, salt, and black pepper. Whisk these ingredients together until they are well combined.
  • Coating the Carrots: Pour the prepared butter mixture over the carrots in the mixing bowl. Toss the carrots until they are evenly coated. Following this, add the grated parmesan cheese to the bowl and mix until the carrots are uniformly coated.
  • Arrange Carrots on Baking Sheet: Transfer the coated carrots onto the baking sheet, arranging them in a single layer to ensure even cooking.
  • Baking Process: Place the baking sheet in the preheated oven. Bake the carrots for a duration of 20 to 25 minutes, or until they have achieved desired tenderness. It is advisable to stir the carrots halfway through the baking process for uniform cooking.
  • Seasoning Adjustment: Upon completion of baking, remove the carrots from the oven. Taste and adjust the seasoning as necessary to suit personal preferences.
  • Final Garnishing: Sprinkle the baked carrots with freshly chopped parsley before serving.
