  • Zest of 2 Lemons approximately 2 tablespoons
  • 3 tablespoons of Heavy Whipping Cream
  • 1 teaspoon of Vanilla Paste or Extract optional
  • 2-3 drops of Yellow Food Coloring optional
  • 1/4 cup of Powdered Sugar for coating

  • Preparation of White Chocolate: Begin by placing the white chocolate chips into a medium-sized mixing bowl. This step is crucial for ensuring the chocolate is ready to be combined with the cream mixture.
  • Infusion of Flavors: In a small saucepan, combine the butter and salt with the lemon zest. Stir continuously while adding the heavy whipping cream. Heat this mixture until it is on the verge of boiling. Once heated, pour the mixture through a fine-mesh sieve directly over the white chocolate chips. If desired, incorporate the vanilla paste or extract and the optional yellow food coloring. Stir the mixture diligently until it achieves a smooth consistency.
  • Chilling and Setting: Cover the bowl containing the truffle mixture and place it in the refrigerator. Allow the mixture to cool until it reaches a consistency firm enough to be shaped into balls. This process typically takes between 30 minutes to 1 hour.
  • Forming Truffles: Once the mixture has set, use a teaspoon to scoop heaping portions of the chocolate mixture. Roll these portions into ball shapes. Subsequently, roll these balls in the powdered sugar to coat them evenly. Lastly, place the truffles back in the refrigerator and chill for a minimum of 30 minutes prior to serving.
