Embark on a culinary adventure with these easy-to-make Lemon White Chocolate Truffles, perfect for any occasion. Here's a step-by-step guide to creating these delightful treats.
- Preparation of Ingredients: Start by placing the white chocolate chips in a bowl. This setup is key to ensuring they're ready to be seamlessly combined with the other ingredients.
- Creating the Flavor Base: Melt butter and salt with lemon zest in a saucepan. This step infuses the butter with a refreshing lemon flavor. Adding the heavy cream and heating it up creates a rich, creamy base.
- Combining and Setting: Strain this hot mixture over the chocolate chips, add vanilla and optional food coloring, and stir until smooth. This process allows the flavors to meld beautifully. Refrigerating the mixture until firm sets the stage for perfect truffle formation.
- Shaping and Finishing Touches: Once firm, shape the mixture into balls and roll them in powdered sugar for a sweet, elegant finish. Refrigerating them again ensures they hold their shape and texture, making them ready to serve and enjoy.

Recipe Card
Lemon White Chocolate Truffles
Ingredients
- 180 grams of White Chocolate Chips
- 60 grams of Butter
- A significant pinch of Salt
- Zest of 2 Lemons approximately 2 tablespoons
- 3 tablespoons of Heavy Whipping Cream
- 1 teaspoon of Vanilla Paste or Extract optional
- 2-3 drops of Yellow Food Coloring optional
- ¼ cup of Powdered Sugar for coating
Instructions
- Preparation of White Chocolate: Begin by placing the white chocolate chips into a medium-sized mixing bowl. This step is crucial for ensuring the chocolate is ready to be combined with the cream mixture.
- Infusion of Flavors: In a small saucepan, combine the butter and salt with the lemon zest. Stir continuously while adding the heavy whipping cream. Heat this mixture until it is on the verge of boiling. Once heated, pour the mixture through a fine-mesh sieve directly over the white chocolate chips. If desired, incorporate the vanilla paste or extract and the optional yellow food coloring. Stir the mixture diligently until it achieves a smooth consistency.
- Chilling and Setting: Cover the bowl containing the truffle mixture and place it in the refrigerator. Allow the mixture to cool until it reaches a consistency firm enough to be shaped into balls. This process typically takes between 30 minutes to 1 hour.
- Forming Truffles: Once the mixture has set, use a teaspoon to scoop heaping portions of the chocolate mixture. Roll these portions into ball shapes. Subsequently, roll these balls in the powdered sugar to coat them evenly. Lastly, place the truffles back in the refrigerator and chill for a minimum of 30 minutes prior to serving. This final chilling step ensures the truffles maintain their shape and texture.

After incorporating all ingredients, the butter separates so bad! I have to siphon it off. I’ve made this twice, and happened both times. What am I doing wrong?!?!!!
