  • 4 medium-sized chicken breasts alternatively, 2 large chicken breasts, halved lengthwise
  • 2 teaspoons of olive oil
  • 1 teaspoon of paprika
  • 1 teaspoon of Italian seasoning
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 cup of pickled pepper rings
  • 1/2 cup of shredded mozzarella cheese
  • 1/2 cup of shredded pepper jack cheese
  • Finely chopped parsley for garnish

Instructions

  • Preparation of Cooking Area: Begin by preheating the oven to 400 degrees Fahrenheit (200 degrees Celsius). Proceed to lightly grease a 9x13 inch baking dish using oil or a cooking spray.
  • Seasoning the Chicken: Place the chicken breasts in the prepared baking dish. Drizzle them with olive oil, ensuring an even coating. Subsequently, season the chicken breasts on both sides with a blend of salt, paprika, black pepper, garlic powder, and Italian seasoning.
  • Adding Peppers and Cheese: Place the pickled pepper rings over the seasoned chicken breasts. Sprinkle a generous amount of both mozzarella and pepper jack cheese over the chicken.
  • Baking Process: Place the baking dish in the preheated oven. Bake for a duration of 20 to 25 minutes. The chicken is considered done when its internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius), and the cheese on top is bubbly and has attained a golden color.
