Ingredients
  

  • Corn: 2 cups
  • Cornmeal: 1/4 cup
  • All-Purpose Flour: 1/4 cup
  • Smoked Paprika: 1 teaspoon
  • Egg: 1
  • Green Onion chopped: 1
  • Grated Parmesan or cheese of choice: 1/2 cup
  • Cilantro chopped: 1 handful
  • Lime Juice: 1 tablespoon
  • Salt: to taste
  • Fresh Cracked Pepper: to taste
  • Oil: 1 tablespoon
  • Sour or Heavy Cream for garnish

Instructions

  • Preparation of Batter: In a large bowl, combine the following ingredients: corn, cornmeal, all-purpose flour, smoked paprika, egg, grated parmesan or cheese of choice, chopped green onion, chopped cilantro, and lime juice. Assess the mixture's consistency; add a small amount of water if it appears overly dry.
  • Cooking the Fritters: Heat a tablespoon of oil in a skillet over medium heat. Once the oil is hot, spoon the corn mixture into the skillet, forming small, evenly sized patties. Cook each side of the fritters for approximately four minutes or until they achieve a golden brown coloration. Flip the fritters cautiously to ensure even cooking on both sides.
  • Serving: Upon achieving the desired crispiness and golden hue, remove the fritters from the skillet. Place them on a serving dish, and as a final touch, garnish each fritter with a dollop of sour or heavy cream. Serve immediately for optimal taste and texture.
