  • 1 pound of cashew nuts
  • 3 tablespoons of honey
  • 1 tablespoon of maple syrup
  • 1 ½ tablespoon of unsalted butter
  • 1 teaspoon of vanilla extract
  • ¼ teaspoon of cinnamon
  • 1 teaspoon of kosher salt
  • 2 tablespoons of granulated sugar

Instructions

  • Preparation: Begin by preheating your oven to 350°F (177°C). Line a baking sheet with aluminum foil to facilitate easy cleanup.
  • Cashew Preparation: Deposit the cashews into a large mixing bowl and set aside for subsequent coating.
  • Coating Mixture: In a microwave-safe bowl, combine the unsalted butter, honey, and maple syrup. Heat the mixture in the microwave for approximately 20-30 seconds or until the butter has fully melted. Remove the bowl from the microwave and incorporate the cinnamon, vanilla extract, and kosher salt into the melted mixture.
  • Coating the Cashews: Pour the prepared coating mixture over the cashews in the large bowl. Toss the cashews until they are uniformly coated with the mixture. Then, evenly spread the coated cashews onto the prepared baking sheet.
  • Baking: Place the baking sheet in the preheated oven. Allow the cashews to bake for 12 minutes. At the six-minute mark, remove the baking sheet from the oven and toss the cashews to ensure even roasting. Return the baking sheet to the oven to complete the baking process.
  • Final Touch: Once the baking is complete, remove the cashews from the oven. While still warm, sprinkle the cashews with the granulated sugar and toss to evenly coat. Allow the cashews to cool directly on the baking sheet.
  • Storage: Transfer the cooled honey roasted cashews to an airtight container for storage. This will ensure they retain their freshness and texture.
