Ingredients
  

For the Bang Bang Sauce:

  • 3/4 cup of mayonnaise
  • 1/2 cup of sweet chili sauce
  • 1/4 cup of sour cream
  • 2 tablespoons of honey
  • 2 teaspoons of hot sauce Frank's sauce recommended

For the Chicken:

  • 2 boneless skinless chicken breasts, approximately 1.5 pounds, cut into 1-inch cubes
  • 1 teaspoon of kosher salt
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of dry mustard powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of ground black pepper

Instructions

  • Preparation of Skewers: If utilizing wooden skewers, commence by immersing them in water for a minimum of 30 minutes to prevent burning during the grilling process.
  • Sauce Preparation: In a small mixing bowl, combine the mayonnaise, sweet chili sauce, sour cream, honey, and hot sauce. Stir the mixture thoroughly until all ingredients are well amalgamated. Refrigerate the sauce until it is required for use.
  • Seasoning the Chicken: In a sizable mixing bowl, deposit the chicken pieces. Sprinkle the kosher salt, smoked paprika, garlic powder, dry mustard powder, onion powder, and ground black pepper over the chicken. Utilize clean hands or a utensil to ensure that the chicken pieces are uniformly coated with the seasoning blend.
  • Assembling the Skewers: Thread approximately six pieces of the seasoned chicken onto each skewer, preparing them for grilling.
  • Sauce Application for Cooking: Transfer approximately 1/4 cup of the prepared Bang Bang sauce into a separate bowl. This precaution is crucial as the sauce will be used to brush onto the raw chicken skewers, and the brush may become contaminated. Reserve the remaining sauce for serving.
  • Pre-grilling Refrigeration: Coat all sides of the chicken skewers with the separated Bang Bang sauce. It is advisable to refrigerate the prepared skewers for 30 minutes to 2 hours. If opting to refrigerate overnight, cover the skewers with plastic wrap to maintain freshness.
  • Grilling the Skewers: Preheat the grill to a temperature between 400 and 425 degrees Fahrenheit. Place the skewers on the grill and allow them to cook for 4 minutes. Afterward, turn the skewers over and continue to grill for an additional 4 minutes. Should the chicken not reach an internal temperature of 165 degrees Fahrenheit or still display pinkness, extend the cooking time by an additional 2 to 4 minutes, depending on the size of the chicken pieces.
  • Serving: Remove the skewers from the grill and serve immediately. Accompany the skewers with the reserved Bang Bang sauce for dipping.
