Ingredients
  

  • 2 tablespoons of olive oil
  • 12 ounces of turkey kielbasa or pork, pre-cooked
  • 1 cup of finely diced yellow onion
  • ½ teaspoon of salt
  • teaspoon of ground black pepper
  • 2 cloves of garlic minced
  • 3 cups of dry penne pasta
  • 2 cups of chicken stock
  • ½ cup of heavy cream
  • 6 ounces of jarred roasted red peppers drained and roughly chopped
  • 1 cup of finely shredded Parmesan cheese freshly grated from the block
  • 1 tablespoon of freshly minced parsley

Instructions

  • Preparation of Kielbasa: Begin by cutting the kielbasa diagonally into 1-inch segments to enhance the aesthetic and flavor exposure. Heat one tablespoon of olive oil in a large, heavy-bottomed dutch oven over medium heat. Place the kielbasa pieces in the pan in a single layer and sauté them for approximately 2 minutes on each side or until they are adequately browned. Once done, transfer the kielbasa to a plate and set aside temporarily.
  • Sautéing the Onions: In the same dutch oven, add the remaining tablespoon of olive oil along with the diced onions, salt, and pepper. To facilitate the deglazing of the pan, add a modest amount—about 2 tablespoons—of chicken stock. Utilize a wooden spoon to scrape up the flavorful browned bits from the bottom of the pan. Continue to cook the onions for 2 minutes, stirring regularly until they are soft.
  • Cooking the Pasta: Introduce the dry penne pasta into the pot, along with the remaining chicken stock and the heavy cream. Stir the mixture thoroughly to combine. Cover the dutch oven with a lid and allow the pasta to cook for 12 minutes. It's crucial to stir the pasta intermittently, especially at the halfway point, to prevent it from sticking to the bottom of the pot.
  • Reintegrating the Kielbasa: Add the previously cooked kielbasa and the chopped roasted red peppers to the pot. Stir the components to integrate them fully and then cover the pot again, allowing the mixture to simmer for an additional 2 minutes to blend the flavors.
  • Adding the Cheese: Remove the pot from the heat. Incorporate the shredded Parmesan cheese, stirring continuously with a wooden spoon until the cheese is completely melted and evenly distributed throughout the pasta.
  • Garnishing and Serving: Finally, sprinkle freshly minced parsley over the pasta before serving to add a touch of freshness and color. Serve the dish immediately to enjoy its full flavor and creamy texture.
