Ingredients

  • 1 pound of uncooked peeled, and deveined shrimp
  • 1 tablespoon of olive oil
  • 6 tablespoons of unsalted butter
  • 1 ¼ cups of white cooking wine
  • 4 teaspoons of minced garlic
  • Juice from half a lemon
  • 1 teaspoon of Italian seasoning
  • Grated Parmesan cheese as desired for garnish

Instructions

  • Shrimp Preparation: Begin by heating the olive oil in a skillet over medium-high heat. Once the oil is hot, introduce the shrimp to the skillet. Sauté them until they are thoroughly cooked and have obtained a pink hue. Subsequently, remove the shrimp from the skillet and set them aside.
  • Sauce Base: Adjust the heat to low and add the butter to the skillet, allowing it to melt. Then, incorporate the minced garlic and sauté for approximately 30 seconds, or until it becomes fragrant.
  • Deglazing and Reducing: Pour the white cooking wine and the lemon juice into the skillet. Continue to cook the mixture, stirring occasionally, until the volume of the liquid has reduced by half.
  • Combining Ingredients: Sprinkle the Italian seasoning over the sauce, then return the cooked shrimp to the skillet. Toss the shrimp in the sauce to ensure they are well coated, and sauté for an additional one to two minutes to integrate the flavors.
  • Final Presentation: Remove the skillet from the heat. Garnish the shrimp scampi with grated Parmesan cheese to taste. If desired, further enhance the dish with parsley before serving.
