Ingredients Notes
To recreate the magical taste of Red Lobster’s shrimp scampi at home, here are some ingredient insights to ensure your dish is as delightful as the original:
- Shrimp: Opt for fresh, uncooked, peeled, and deveined shrimp for the best texture and flavor absorption.
- Butter: Unsalted butter allows you to control the saltiness while adding a rich, smooth base to the sauce.
- White Cooking Wine: A key ingredient, it introduces a subtle sweetness and complexity to the dish.
- Garlic: Minced garlic infuses a pungent aroma that is quintessential to any scampi.
- Lemon Juice: Adds a bright, acidic balance to the buttery sauce.
- Italian Seasoning: This blend of herbs complements the shrimp with additional depth.
- Parmesan Cheese: Grated fresh for a nutty, salty finish that elevates the dish.
How To Make Famous Red Lobster Shrimp Scampi
Crafting the Famous Red Lobster Shrimp Scampi at home is straightforward. Here’s a detailed guide to achieving the perfect scampi every time:
- Shrimp Sautéing: Begin by heating olive oil in a skillet over medium-high heat. Add the shrimp and sauté until pink and fully cooked; this locks in their natural juices. Remove the shrimp and set aside to prevent overcooking.
- Aromatic Base: Lower the heat, then melt the butter in the same skillet. Add garlic, sautéing briefly until fragrant, careful not to let it burn which would introduce a bitter taste.
- Deglazing and Reducing: Pour in the white wine and lemon juice, stirring to lift any flavors left by the shrimp. Simmer until the liquid is reduced by half, concentrating the flavors.
- Final Toss: Stir in the Italian seasoning for herbal notes, then reintroduce the shrimp, tossing them in the sauce to coat evenly and reheat them gently.
- Garnishing: Remove from heat, and generously sprinkle with freshly grated Parmesan cheese for a savory finish. Add parsley for a fresh, colorful garnish if desired.
Storage Options
To preserve the freshness and flavor of the Famous Red Lobster Shrimp Scampi, store any leftovers in an airtight container in the refrigerator for up to two days. Reheat gently in a skillet over low heat to maintain the tenderness of the shrimp. Freezing is not recommended as it can significantly alter the texture of the shrimp and the sauce.
Variations and Substitutions
Personalizing your shrimp scampi can be both fun and rewarding. Here are some variations and substitutions to try:
- Wine Substitutions: If you prefer not to use wine, a good quality chicken or vegetable broth can be a suitable substitute, adding depth without the alcohol.
- Cheese Options: While Parmesan is traditional, trying other hard cheeses like Pecorino Romano can offer a sharper taste.
- Adding Heat: For a spicy kick, sprinkle a pinch of red pepper flakes into the oil before adding shrimp.
- Herb Variations: While Italian seasoning is a great all-in-one solution, using fresh herbs like basil or oregano towards the end of cooking can brighten the dish wonderfully.

Monica Kaiser says
Scampi are not shrimp. They are langostino. Simple a type of crustacean that is similar to a small lobster. Complete ignorance that Red Lobster would claim that shrimp scampi are shrimps...
