How To Make The Hawaiian Banana Bread with Coconut & Pineapple

Ready to bring a taste of Hawaii into your kitchen? Here’s how to make your very own Hawaiian Banana Bread with Coconut & Pineapple:

  1. Oven Preparation: Begin by preheating your oven to 350 degrees Fahrenheit. This ensures the oven reaches the right temperature for an even bake.
  2. Creaming the Base: In a large bowl, use a mixer to cream together the softened butter and sugar until light and fluffy. This step is crucial as it helps to incorporate air into the batter, making for a lighter bread.
  3. Adding Eggs and Fruits: Beat in the eggs one at a time to ensure they are fully incorporated. Then, stir in the mashed banana and pineapple, which introduce both flavor and moisture to the bread.
  4. Mixing Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, and salt. Gradually add these dry ingredients to the wet mixture, mixing until just combined to avoid overworking the batter.
  5. Incorporating Coconut: Fold in the shredded coconut, distributing it evenly throughout the batter for that sweet, nutty flavor.
  6. Baking: Pour the batter into a greased 9×5 inch loaf pan. Bake for 60 minutes, or until a toothpick inserted in the center comes out clean. This long bake time allows the loaf to cook through evenly while developing a golden crust.

Storage Options

Hawaiian Banana Bread with Coconut & Pineapple can be stored at room temperature for up to three days, ensuring it’s kept in an airtight container to maintain its moisture and freshness. For longer storage, wrap it well in plastic wrap and refrigerate for up to a week, or freeze for up to three months. Just wrap it in foil over the plastic to protect against freezer burn. When you’re ready to enjoy, thaw it at room temperature or gently warm slices in the microwave for a just-baked taste.

Cook Time: 1 hour
Total Time: 1 hour 10 minutes
Servings: 12 Slices

Ingredients

  • ½ cup of butter softened
  • 1 cup of granulated sugar
  • 2 large eggs
  • 1 very ripe banana mashed
  • 1 cup of crushed pineapple undrained
  • 2 cups of all-purpose flour
  • 1 teaspoon of baking powder
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • ¼ cup of shredded coconut

Instructions

  • Oven Preparation: Initiate the baking process by preheating your oven to 350 degrees Fahrenheit. This ensures the oven reaches the appropriate temperature for baking.
  • Creaming Butter and Sugar: In a substantial mixing bowl, utilize an electric mixer to cream together the softened butter and sugar until the mixture is light and fluffy. This step is essential for introducing air into the batter, which helps in achieving a soft, well-risen bread.
  • Incorporating Eggs and Fruits: Add the eggs to the butter and sugar mixture one at a time, beating well after each addition to ensure thorough integration. Following the eggs, incorporate the mashed banana and crushed pineapple into the mixture, stirring until evenly combined.
  • Combining Dry Ingredients: In a separate medium-sized bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Gradually incorporate these dry ingredients into the wet mixture, stirring until just combined to avoid over-mixing, which could lead to a denser loaf.
  • Adding Coconut: Fold in the shredded coconut, ensuring it is evenly distributed throughout the batter to infuse the bread with its distinctive flavor and texture.
  • Baking the Bread: Transfer the batter into a greased 9×5 inch loaf pan. Place in the preheated oven and bake for approximately 60 minutes, or until a toothpick or cake tester inserted into the center of the bread comes out clean, indicating that it is fully baked.

Delicious bread! I used half whole wheat AP and half Gluten Free flour and added chopped macadamia nuts to half. This bread is amazing! Not overly sweet – just enough – and moist without being gloppy. I feel like the pineapple flavor is subtle, but enough to be just a bit different! Absolutely recommend! 💖
