Discover the delightful blend of flaky shortbread crust, tart Granny Smith apples, and a crunchy pecan topping in these Flaky Apple Pie Bars. Perfect for gatherings, these bars offer the classic taste of apple pie without the fuss of rolling dough.
Every fall, as the air turns crisp and leaves start to twirl gently to the ground, my kitchen transforms into an apple-themed bakery. The story behind these Flaky Apple Pie Bars starts with my grandmother’s traditional apple pie recipe, which I adored but always found a bit too daunting to make from scratch with my clumsy pastry skills. One autumn afternoon, motivated by a craving for her pie but strapped for time, I experimented with her recipe to create something quicker yet just as heartwarming. The result was these apple pie bars. They have all the homey, spiced apple flavor of her pies in a form even a baking novice can master. Now, every bite takes me back to those golden afternoons in my grandmother's kitchen, the sweet aroma of apples filling the air, laughter mingling with the sound of a whisk against the bowl.

Ingredients Notes
When it comes to making Flaky Apple Pie Bars, each ingredient plays a crucial role in creating a dessert that’s both delicious and easy to make. Here’s what you’ll need:
- Flour and Granulated Sugar: These form the base of the crust, giving it structure and a mild sweetness.
- Butter or Shortening: This fat is cut into the flour to create a flaky texture in the crust.
- Egg Yolks and Milk: These enrich the dough, adding moisture and richness, which helps to bind the crust.
- Granny Smith Apples: Known for their tartness and firmness, these apples hold up well during baking and provide a perfect contrast to the sweet toppings.
- Brown Sugar and White Sugar: A combination of sugars sweetens the apple filling and adds a caramel-like flavor to the topping.
- Cinnamon: This spice is essential for adding warmth and depth to the apple layer.
How To Make These Flaky Apple Pie Bars
Ready to whip up some Flaky Apple Pie Bars? Let’s break down the recipe into manageable steps:
- Prep and Mix Dry Ingredients: Start by preheating your oven to 375 degrees Fahrenheit and greasing a 9x13 baking pan. In a large bowl, mix flour and sugar to start your crust.
- Make the Dough: Use a pastry cutter to blend butter or shortening into your flour mixture until crumbly. In a separate bowl, whisk together egg yolks and milk, then add to your flour mixture, stirring until a cohesive dough forms. Remember to set aside one-fourth of this dough for your topping.
- Assemble the Base: Press the bulk of your dough evenly into the bottom of your prepared pan. This will form the supportive base for your luscious apple filling.
- Add the Apples and Sugar: Layer your thinly sliced apples over the dough, then sprinkle evenly with a mix of white sugar, brown sugar, and cinnamon for that classic apple pie sweetness.
- Prepare and Add the Topping: Crumble the reserved dough with additional flour, sugars, and crushed pecans, then scatter this mixture over the apples to create a crunchy, sweet topping.
- Bake and Serve: Bake your creation for 40 minutes until golden and bubbly. Allow the bars to cool in the pan before slicing into squares. This makes it easier to serve and enjoy!
Storage Options
Flaky Apple Pie Bars are as practical as they are tasty, especially when it comes to storage. Once cooled, these bars can be kept at room temperature for up to two days, making them a great make-ahead option for events. For longer storage, refrigerate them for up to a week, or freeze them for up to three months. Just wrap them well to avoid freezer burn. Whether you're enjoying them the next day or next month, these bars retain their delightful texture and taste just like freshly baked apple pie!
