Creamed Spinach:

  • 1 tablespoon vegetable oil
  • 10 ounces fresh spinach
  • 4 cloves garlic minced
  • cup half-and-half
  • cup mozzarella cheese shredded

  • 1 tablespoon vegetable oil
  • 4 ounces mushrooms sliced
  • 4 slices bacon cooked and chopped
  • 4 slices Pepper Jack cheese or Monterey Jack Cheese with Jalapenos

    I intend to make this dish with the addition of tomatoes as well as some coarsely chopped artichoke hearts because I think the ingredients skew this recipe toward being Mediterranean. In the ingredients you list Monterey Jack Cheese and Jalapenos as a substitute for Pepper Jack cheese; perhaps you should suggest how much jalapenos to add to the cheese and state for the benefit of those who may not know that it is the same as Pepper Jack Cheese and not a substitute for it.
