- Flour: Use unbleached all-purpose flour for a sturdy yet tender texture. The 'scoop and level' method ensures the perfect amount.
- Sugars: A duo of light brown and granulated sugar creates a rich, caramel-like sweetness and contributes to the cookies' moist texture.
- Eggs: They act as a binding agent, giving the cookies structure and richness.
- Chocolate Chips: Semi-sweet chips offer a balanced chocolate flavor, complementing the other ingredients.
- Oats: Rolled oats add a chewy texture and a subtle, nutty flavor.
- Coconut & Pecans: Shredded coconut adds moisture and sweetness, while toasted pecans provide a delightful crunch and nutty taste.
Baking Cowboy Cookies: A Step-by-Step Guide
- Prep the Dry Mix: Whisking flour, baking soda, cinnamon, and salt in a bowl sets the stage for a well-balanced cookie base.
- Creaming the Butter and Sugars: The key to a perfect texture! Creaming butter with brown and granulated sugar until well blended ensures a light and fluffy cookie.
- Egg and Vanilla Fusion: Adding eggs one at a time, followed by vanilla, and scraping down the bowl ensures an even, rich mixture.
- Incorporating Dry Ingredients: Gradually mixing in the flour mixture creates a uniform dough without overworking it.
- Adding the Goodies: Stirring in chocolate chips, oats, coconut, and pecans by hand if needed, distributes the mix-ins evenly, ensuring every cookie is loaded with flavors.
- Chilling for Perfection: Chilling the dough makes it less sticky and easier to handle, leading to better-shaped cookies.
- Shaping and Baking: Scooping, rolling, and flattening the dough ensures uniform cookies that bake evenly. Adding extra chocolate chips on top adds a visual and flavor boost.
- Cooling: Letting cookies cool on the baking sheet for a few minutes helps them set without becoming too hard.
Keeping Cowboy Cookies Fresh and Delicious
- Room Temperature Storage: Store in an airtight container for up to a week. This method keeps them chewy and delicious.
- Freezing the Dough: You can freeze the cookie dough balls for up to 3 months. Bake straight from the freezer, adding a couple of minutes to the baking time.
- Freezing Baked Cookies: Freeze baked cookies in airtight containers, separating layers with parchment paper. Thaw at room temperature for fresh-tasting cookies anytime!
Cowboy Cookies: Customizing the Classic
- Chocolate Chips: Swap semi-sweet chips with milk, dark, or white chocolate chips for different flavor profiles.
- Nuts: Replace pecans with walnuts or almonds for a twist in the nutty crunch.
- Gluten-Free Version: Use gluten-free flour and ensure oats are certified gluten-free.
- Vegan Adaptation: Opt for vegan butter, egg substitutes, and dairy-free chocolate chips for a vegan-friendly version.
- Reduced Sugar: Cut down on sugars for a less sweet version, adjusting to your preference.
- Spice It Up: Add a pinch of nutmeg or replace cinnamon with pumpkin spice for a seasonal variation.

Servings: 31
Ingredients
- Unbleached All-Purpose Flour: 1 ¾ cups 248 grams, measured using the scoop and level method
- Baking Soda: 1 teaspoon
- Ground Cinnamon: 1 teaspoon
- Salt: ¾ teaspoon
- Unsalted Butter: 1 cup 226 grams, at room temperature
- Light Brown Sugar: 1 cup 200 grams, packed
- Granulated Sugar: ½ cup 100 grams
- Large Eggs: 2
- Vanilla Extract: 2 teaspoons
- Semi-Sweet Chocolate Chips: 2 cups 340 grams, divided
- Rolled Oats not quick oats: 2 cups (184 grams)
- Moist Shredded Sweetened Coconut such as Baker's: 1 ½ cups (140 grams)
- Pecans: 1 ¼ cups toasted and chopped
Instructions
- Preparation of Dry Ingredients: In a mixing bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, and salt. Once thoroughly combined, set this mixture aside.
- Creaming Butter and Sugars: Utilize the bowl of an electric stand mixer fitted with a paddle attachment. In it, cream together the unsalted butter, light brown sugar, and granulated sugar until the mixture is well blended and smooth.
- Incorporating Eggs and Vanilla: Proceed to mix in one egg into the butter and sugar mixture. Following this, add the second egg along with the vanilla extract. Ensure to scrape down the sides and bottom of the bowl to integrate all ingredients evenly.
- Adding Flour Mixture: Gradually add the previously prepared flour mixture to the creamed mixture. Mix these ingredients until they are just combined, taking care not to overmix.
- Incorporating Mix-ins: To the dough, add 1 ½ cups of the semi-sweet chocolate chips, along with the rolled oats, shredded coconut, and chopped pecans. If necessary, due to the size of the mixer, fold these ingredients in by hand using a wooden spoon to prevent overflowing.
- Chilling the Dough: Cover the bowl containing the dough and chill in the refrigerator. This is done to reduce the stickiness of the dough and to make it easier to handle, a process taking approximately 1 hour. Preheat the oven to 350 degrees Fahrenheit during the last 15 minutes of chilling.
- Forming the Cookies: Scoop the dough, measuring 3 tablespoons per cookie (about 50 grams each), and roll them into balls. Press the remaining chocolate chips into the surface of each dough ball, approximately 5 or 6 chips per ball.
- Baking Preparation: Arrange 12 dough balls on a parchment paper-lined 18 by 13-inch baking sheet, ensuring each is spaced 2 inches apart. Keep any remaining dough refrigerated until ready for use.
- Baking: Flatten the dough balls slightly before placing them in the preheated oven. Bake until the cookies are set on the edges and appear lightly golden brown on the bottom, but still slightly raw in the centers. This process should take about 13 to 16 minutes.
- Cooling: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Repeat the baking process with the remaining cookie dough. Store the baked cookies in an airtight container.
