Ingredients for Oatmeal Lace Cookies:
Alright, cookie monsters, a few notes to ensure cookie success:
- Butter: Always opt for unsalted butter. This lets you have total control over the saltiness of the cookie.
- Brown Sugar: Dark brown sugar gives a richer flavor. If you only have light brown sugar, it’ll work, but the darker cousin brings more of that molasses punch.
- Rolled Oats: Thick-cut oats are the VIP here, as they give texture and bite. However, if your pantry only boasts regular rolled oats, it's no biggie. Just expect a slightly different texture.
How to make Oatmeal Lace Cookies:
Here's the deets, broken down so even my cat Mr. Whiskers could make them (if he had thumbs, and if he cared about anything other than napping):
- Get That Oven Hot: Preheating is key! Ensure your oven hits 350F and line that baking sheet like you're dressing it for a red carpet.
- Melty Goodness: On medium heat, let the butter and brown sugar have a little dance in the saucepan until they form a thick, luscious paste. Some streaks? Puddles of butter? It's cool, perfection is overrated anyway.
- Flour Power: Off the heat, get that flour, vanilla, and salt in there. Let the mixture cool for about 10 minutes—like a short beauty nap.
- Egg and Oats Party: Ensure the mixture isn't burning hot (we don't want scrambled eggs). Stir in that egg, and then invite the oats for the grand finale.
- Cookie Shaping Time: A tablespoon of batter per cookie ensures they don't turn into giants. Spread them thin! Think of each cookie as a beautiful oat pancake.
- Baking: In the oven they go for about 8 minutes, or until the cookie edges flirt with a golden hue. Once out, let them chill (literally) on the parchment.
- Storage (If They Last That Long): Airtight container, parchment paper layers, and up to 3 days of crispy goodness await.
Storage Options:
So, if you possess some superhuman strength to not gobble these down immediately, here's the deal: Store these delicate darlings in an airtight container, layering them between parchment paper sheets to prevent sticking. Remember, they'll stay besties with your taste buds for up to 3 days.
Variations and Substitutions:
Here's where you can jazz things up:
- Choco-Addict: A drizzle of melted dark chocolate over the cooled cookies? Yes, please!
- Nutty Buddy: Add some finely chopped almonds or pecans to the batter for an extra crunch.
- No Brown Sugar? Swap it with coconut sugar or even maple syrup, but expect a slight change in texture and flavor.
- Gluten-Free: Swap all-purpose flour with almond flour or another gluten-free variant.
Alright, cookie champs, don your aprons and get baking! May the cookie force be with you! 🍪🌟
Recipe Card
Oatmeal Lace Cookies
Ingredients
- 113 g unsalted butter
- 220 g dark brown sugar packed
- 2 tablespoons all-purpose flour
- 2 teaspoons pure vanilla extract
- ½ teaspoon kosher salt
- 1 large egg
- 170 g thick-cut rolled oats regular rolled oats may be substituted if necessary
Instructions
- Preparation of Oven and Baking Tray: Set the oven to a temperature of 350°F. Prepare a baking sheet by lining it with parchment paper.
- Combining Butter and Sugar: In a medium-sized saucepan set over medium heat, melt the unsalted butter and dark brown sugar until they merge into a consistent brown paste. Minor separation in the form of streaks or puddles of butter is acceptable; they needn't amalgamate entirely.
- Incorporation of Flour: Remove the saucepan from the heat source. Introduce the all-purpose flour, vanilla extract, and kosher salt into the mixture. Allow this batter, which will be notably thin, to cool for approximately 10 minutes.
- Addition of Egg and Oats: Once the mixture has attained a safe temperature—warm but not scalding—integrate the egg, ensuring thorough mixing. Subsequently, incorporate the thick-cut rolled oats until they are evenly dispersed throughout the batter.
- Shaping of Cookies: Utilize a tablespoon to allocate portions of the batter onto the pre-prepared baking sheet, ensuring a spacing of at least 2 inches between each portion. Employ the back of the spoon to mold each portion into a fine circle, such that the oats are uniformly spread. Should space be limited on one baking sheet, it is advisable to bake the cookies in sequential batches.
- Baking Process: Place the baking sheet in the preheated oven and bake the cookies for a duration of 8 minutes. The process is complete when the peripheral edges of the cookies adopt a dark golden brown hue. Once baked, allow the cookies to cool in their entirety on the parchment paper. It should be noted that the cookies should detach effortlessly from the parchment paper post-cooling, but an offset spatula can be employed if any adherence is observed.
- Storage Recommendations: To maintain optimal freshness, the cookies should be stored in an airtight container. It is advisable to layer the cookies between parchment paper within the container. Under these conditions, the cookies will retain their quality for up to 3 days.

my cookies were much thinner than those in the picture and actually looked like lace due to the small holes throughout. Very easy recipe! Will make again and try one of the suggestions and add pecans.
