Ingredients Notes
Diving into the Quick & Easy Mozzarella Chicken, you're met with a harmony of flavors that are both bold and comforting. Here are a few notes on the key ingredients:
- Olive Oil: A kitchen staple that sets the foundation for sautéing the onions and garlic, providing a rich base for the sauce.
- Onion and Garlic: These aromatics are essential for building depth of flavor. They’re sautéed just until golden to release their sweet and pungent flavors.
- Crushed Tomatoes: Whether you opt for a simple can of crushed tomatoes or your favorite marinara, this ingredient adds body and tanginess to the dish.
- Italian Seasoning and Spices: A blend that brings the essence of Italy right into your skillet, marrying well with the tomatoes and infusing the chicken with robust flavors.
- Chicken Breasts: The star of the dish, these are cooked to juicy perfection. Opt for small to medium sizes for even cooking.
- Mozzarella Cheese: Choose between fresh or shredded, but make sure it’s plentiful to achieve that stretchy, melty cheese pull we all adore.
- Fresh Basil: A final garnish that not only adds a pop of color but also a fresh, herby brightness that cuts through the richness of the cheese.
How To Make The Quick & Easy Mozzarella Chicken
Crafting this Quick & Easy Mozzarella Chicken is as simple as it gets, but let’s break down each step to ensure you get the perfect result every time:
- Garnishing: A sprinkle of fresh basil on the finished dish adds a fresh contrast to the warm, cheesy sauce, making every bite a delight.
- Oven Preparation: Start by heating your oven to 400ºF, setting the stage for a quick bake that locks in flavors.
- Sauté Aromatics: In an oven-safe skillet, heat olive oil, then add onions, cooking them until they are just turning golden at the edges. This not only brings out their natural sweetness but also layers in flavors right from the start.
- Build the Sauce: Add minced garlic to the onions, letting it cook until aromatic, then quickly follow with crushed tomatoes and your selection of spices. This creates a fragrant and flavorful sauce in minutes.
- Cook the Chicken: Place chicken breasts in the skillet, giving them a quick sear on each side to enhance their flavor and texture. This step is crucial for adding a depth of flavor to the poultry.
- Bake: Transfer the skillet to your preheated oven, allowing the chicken to bake halfway before topping it with mozzarella, which melts into gooey perfection as it finishes cooking.
Storage Options
After enjoying the succulent Quick & Easy Mozzarella Chicken, if you find yourself with leftovers, fear not! This dish stores beautifully. Simply allow it to cool completely before transferring it into an airtight container. It can be refrigerated for up to three days, making it a fantastic option for meal prep or those nights when even 30 minutes in the kitchen seems too daunting. To reheat, gently warm it in the oven or microwave until heated through. The cheese may not be as perfectly melty as on the first night, but the flavors will remain rich and satisfying.
Variations and Substitutions
The beauty of this Quick & Easy Mozzarella Chicken lies in its adaptability to different tastes and dietary needs:
- Tomato Sauce Alternatives: If tomatoes aren’t your thing or you're looking to lower the acidity, try using a creamy Alfredo or a pesto sauce for a delightful twist.
- Cheese Varieties: While mozzarella is the star here, feel free to experiment with provolone for a sharper taste or a blend of Italian cheeses for a more complex flavor profile.
- Adding Vegetables: Enhance the nutritional value and color of the dish by adding spinach, mushrooms, or bell peppers to the sauce.
- Protein Substitutes: Not a fan of chicken? This recipe can easily be adapted with slices of eggplant or portobello mushrooms for a vegetarian version that still satisfies the craving for something hearty.
Each of these tips ensures that the Quick & Easy Mozzarella Chicken can remain a staple in your culinary repertoire, adaptable to whatever the occasion or palate desires.

Quick & Easy Mozzarella Chicken
Ingredients
- 2 tablespoons of olive oil
- 1 finely chopped onion
- 3 to 4 cloves of garlic minced or grated
- 1 15 oz can of crushed tomatoes or preferred marinara sauce
- 1 teaspoon of Italian seasoning
- ½ teaspoon each of garlic powder crushed red pepper, salt, and black pepper
- 4 small to medium boneless skinless chicken breasts
- 8 ounces of fresh or shredded mozzarella cheese
- Fresh basil for garnishing
Instructions
- Preheat the Oven: Begin by preheating the oven to 400 degrees Fahrenheit.
- Sauté Onions: In a large, oven-safe skillet, heat the olive oil over medium-high heat. Add the chopped onion and sauté for approximately 2-3 minutes, or until the onions have softened and the edges begin to take on a slight golden color.
- Add Garlic and Tomatoes: Introduce the minced garlic to the skillet and sauté for about 30 seconds, just until it becomes fragrant. Following this, add the crushed tomatoes along with the Italian seasoning, garlic powder, crushed red pepper, salt, and pepper. Continue to sauté for an additional 2 minutes to allow the flavors to meld.
- Brown the Chicken: Place the chicken breasts in the skillet, cooking them for 1-2 minutes on each side to slightly brown them.
- Bake the Chicken: Transfer the skillet to the preheated oven and bake the chicken for 10 minutes. After the initial baking period, flip the chicken breasts over.
- Add Mozzarella and Finish Baking: Top each chicken breast with slices of fresh mozzarella cheese (or shredded mozzarella, if using) and return the skillet to the oven. Bake for another 10 minutes, or until the chicken is thoroughly cooked to an internal temperature of 165 degrees Fahrenheit.
- Garnish and Serve: Remove the skillet from the oven, garnish the chicken with fresh basil, and serve immediately.

Could you please explain how you brown the chicken when you've already made the sauce in the skillet. Am I missing something? Otherwise it sounds wonderful.
June says
Are the chicken breasts supposed to be browned in the skillet that already has the sauce in it? Other than that, the recipe sounds scrumptious.
June says
This recipe sounds scrumptious. Are you supposed to sear the chicken in the skillet, remove it, THEN build the sauce? Thank you!
Patrice Cooper says
This sounds very easy to prepare, but the part about cooking the chicken, do you cook it within the onion, garlic, and tomato mixture, or do you cook it separately, because the chicken is raw when you first put it in the skillet.
