Ingredients for the Southern Sweet Onion Casserole:
Ah, the ingredients - where the magic begins! Vidalia onions are the star of this dish, known for their unique sweet profile. When you're out shopping, look for onions labelled as Vidalia; accept no imitations! As for the Ritz crackers, they give our casserole that desirable crunch. If you're feeling playful, try the various Ritz flavors for a twist. The unsalted butter helps to keep the sodium in check since we're adding salt separately. And for the cheese enthusiasts out there, choose a high-quality cheddar for the best melt and flavour.
Recipe Breakdown with Detailed Explanations:
Alright, kitchen warriors, let's get to it!
- Step 1: Start by preheating your oven to 375°F. While that's warming up, give your 9x13-inch baking dish a good spray with nonstick spray to avoid any sticking mishaps. Because nobody got time for scrubbing, right?
- Step 2: Take those beautiful Vidalia onions and place them in a saucepan. Add just enough water to cover them, bring to a boil, then reduce the heat and let them simmer for about 8 minutes. This softens them just right. Once done, drain that water and toss the onion slices with the unsalted butter. This gives them a nice, glossy finish and infuses them with buttery goodness.
- Step 3: In a generously sized bowl, channel your inner whisking wizard and whisk together the eggs and evaporated milk. When it's all smooth and combined, add in your buttered onions, cracker crumbs, cheese, salt, and pepper. Stir until everything’s well-acquainted.
- Step 4: Pour this delectable mixture into your greased baking dish. Now, for the pièce de résistance, the topping! Mix together the cracker crumbs and melted butter. Sprinkle this golden delight over your casserole, ensuring an even spread.
- Step 5: Pop it into the oven. Now, patiently wait (maybe dance to some country tunes?) as it bakes to perfection for about 45 minutes. You're looking for a set center and a top that's as golden as a Southern sunrise. Once done, serve and watch those faces light up with joy!
Storage Options for the Southern Sweet Onion Casserole:
Got leftovers? (Although, with this dish, it's hard to imagine!) Simply cover your casserole dish with plastic wrap or aluminum foil and refrigerate. It should stay lip-smacking good for 3-4 days. Want to enjoy it longer? Consider freezing individual portions. Just ensure it's cooled completely before freezing and consume within a month for the best taste. Reheat in the oven for that freshly baked vibe.
Variations and Substitutions for the Recipe:
Variety is the spice of life! If Vidalia onions are playing hard to get, Walla Walla or another sweet onion variety can stand in. Feelin' cheesy? Experiment with a mix of cheddar and pepper jack for a spicy twist. For a gluten-sensitive pal, swap out the Ritz crackers for a gluten-free option, though results might slightly vary in crunchiness. If you're looking to lighten it up, try a reduced-fat cheese or a lighter version of evaporated milk. Remember, it's all about making this classic Southern dish your own. Happy cookin', y'all! 🍴😉
Recipe Card
Southern Sweet Onion Casserole
Ingredients
- 4 large Vidalia onions precisely sliced to ¼-inch thickness
- 2 tablespoons of unsalted butter
- 3 eggs
- 1 can 5 oz of evaporated milk
- 1 cup of Ritz cracker crumbs
- 1 ½ cups of grated cheddar cheese
- 1 teaspoon of salt
- ¼ teaspoon of black pepper
For the Topping:
- 1 cup of Ritz cracker crumbs
- 3 tablespoons of melted butter
Instructions
- Commence by preheating the oven to 375°F. Simultaneously, prepare a 9x13-inch baking dish by greasing it thoroughly with a nonstick spray.
- In a medium-sized saucepan, submerge the sliced Vidalia onions with water. Set the heat to high, bringing the water to a boil. Upon reaching a boil, lower the heat, allowing the onions to simmer for approximately 8 minutes. Following this, ensure the onions are adequately drained, then proceed to mix them with the unsalted butter.
- In a separate, larger bowl, vigorously whisk the eggs and evaporated milk until thoroughly combined. Incorporate the previously prepared onions, followed by the Ritz cracker crumbs, grated cheddar cheese, salt, and pepper. Ensure the mixture is well-integrated.
- Transfer the harmonized mixture into the baking dish. For the topping, meticulously combine the Ritz cracker crumbs with the melted butter. Sprinkle this combination uniformly over the casserole.
- Place the dish into the preheated oven, allowing it to bake until the center is firm and the top has achieved a golden brown hue, which typically requires 45 minutes. Serve upon completion.

It turned out great. Had a former F&B professional for Easter Dinner and fixed the onion casserole. She said it impressed her.
