- Seasoned Breadcrumbs and Milk: These help bind the ingredients together while adding subtle flavors and moisture.

How To Make Baked Chicken Ricotta Meatballs
Let’s dive into making these delightful Baked Chicken Ricotta Meatballs:
- Preparation: Start by preheating your oven and lining your baking sheet. Soak the breadcrumbs in milk to soften them, which is essential for the perfect meatball texture.
- Mixing the Ingredients: Combine the softened breadcrumbs with ground chicken, ricotta, and all other ingredients. It’s crucial not to overmix to avoid dense meatballs.
- Forming and Baking: Shape the mixture into balls and bake until crispy on the outside. This method ensures they’re cooked perfectly inside without being dry.
- Sauce Preparation: While the meatballs bake, prepare the Alfredo sauce and wilt the spinach in it. This step infuses the sauce with flavor and adds a healthy twist with spinach.
- Combining and Serving: Add the baked meatballs to the sauce, allowing them to soak up some of the flavors. Serve over jasmine rice for a comforting and complete meal.
Storage Options
These meatballs are as practical as they are delicious. Store leftovers in the refrigerator for up to three days, ensuring they’re in airtight containers to maintain freshness and moisture. For longer storage, freeze them in a single layer before transferring to a freezer bag, where they can last up to three months. Reheat in the oven or microwave when ready to enjoy.
Variations and Substitutions
This recipe is wonderfully adaptable to different tastes and dietary needs:
- Protein Swap: Use ground beef or pork instead of chicken for a richer flavor.
- Cheese Choices: Swap ricotta for cottage cheese for a similar texture but slightly different taste.
- Gluten-Free: Use gluten-free breadcrumbs or rolled oats as a binder for a gluten-free version.
- Sauce Variations: Instead of Alfredo, try a tomato-based sauce or a creamy pesto for a different twist.
This recipe not only offers a delicious meal but also the flexibility to tailor it to your preferences or dietary requirements, making it a must-try in any kitchen!
Recipe Card
Baked Chicken Ricotta Meatballs
Ingredients
- ½ cup of seasoned breadcrumbs
- ½ cup of milk
- 1 finely chopped onion
- 3 cloves of minced garlic
- ¼ cup of freshly chopped parsley
- ¼ cup of finely chopped sun-dried tomatoes
- 1 ½ pounds of ground chicken or turkey
- ¾ cup of ricotta cheese
- 1 large egg
- ⅓ cup of freshly grated Parmesan cheese
- ¾ teaspoon of Italian seasoning
- ½ teaspoon of salt
- ¼ teaspoon of freshly ground black pepper
- 1 jar of prepared Alfredo sauce
- 6 ounces of fresh spinach
Instructions
- Preparation of Oven and Ingredients: Begin by preheating the oven to 450 degrees Fahrenheit. Concurrently, in a medium bowl, combine the breadcrumbs with milk and allow them to soak for approximately two minutes, which is crucial for achieving the desired consistency in the meatballs.
- Combining the Ingredients: In a large mixing bowl, incorporate the soaked breadcrumb mixture with the ground chicken, onion, garlic, parsley, sun-dried tomatoes, ricotta cheese, egg, Parmesan cheese, Italian seasoning, salt, and black pepper. It is imperative to mix these ingredients until just combined, taking care to avoid over-mixing, which can result in overly dense meatballs.
- Forming and Baking the Meatballs: Shape the mixture into uniformly sized balls and arrange them on a baking sheet that has been lined with parchment paper and lightly sprayed with nonstick cooking spray. Place the meatballs in the preheated oven and bake for 15 to 20 minutes, or until they are golden and crisp on the outside and thoroughly cooked inside.
- Sauce Preparation: While the meatballs are baking, warm the Alfredo sauce in a large pan over moderate heat. Add the fresh spinach to the sauce, stirring frequently, and cook until the spinach has completely wilted and integrated into the sauce.
- Final Assembly: Once the meatballs are cooked, incorporate them into the pan with the Alfredo sauce and spinach. Continue to cook this mixture for a few minutes until the sauce slightly thickens. Serve the meatballs and sauce over a bed of jasmine rice, or the base of your choice, ensuring a rich and harmonious blend of flavors.
