Ingredients Notes
Crafting the perfect Cheesy Hamburger Potato Casserole begins with understanding your ingredients and their roles in this symphony of flavors:
- Ground Beef: The star of the dish, providing a robust base with its rich flavors.
- Yellow Onion: Adds a subtle sweetness when sautéed, enhancing the savory notes of the beef.
- Russet Potatoes: Chosen for their starchy quality, which helps to thicken the casserole sauce and absorb all the delicious flavors.
- Cheddar Cheese: Melts beautifully, giving the casserole a gooey, cheesy texture and sharp, tangy taste.
- Condensed Cheddar Soup & Evaporated Milk: These combine to create a creamy, rich sauce that binds all the layers together smoothly.
- Milk & Garlic Powder: Enhance the creaminess and add a gentle hint of garlic.
How To Make This Cheesy Hamburger Potato Casserole
Let’s break down the making of your Cheesy Hamburger Potato Casserole into manageable steps to ensure you get that perfect golden crust and creamy, cheesy middle every time:
- Oven Preparation: Begin by setting your oven to preheat at 350°F and ready your baking dish with a coat of nonstick spray.
- Cook the Beef: Brown the ground beef with onions in a skillet, seasoning it well. This not only builds the flavor base but ensures your beef is deliciously savory.
- Layering: Start by laying down the potato slices, followed by the cooked beef and a sprinkle of cheddar. Season each layer as you go. This step is crucial as it builds the structure of your casserole.
- Prepare the Sauce: Whisk together the cheddar soup, evaporated milk, milk, and garlic powder until smooth. This sauce is what will infiltrate the layers, making them moist and flavorful.
- Baking: Cover with foil and let it bake. The steam trapped inside will cook the potatoes to perfection. Unveil it in the last 15 minutes to achieve that irresistible golden top.

Storage Options
The beauty of the Cheesy Hamburger Potato Casserole extends to its storage flexibility. After enjoying your meal, allow any leftovers to cool completely before covering them and placing them in the refrigerator. This casserole will keep well for up to three to four days when stored properly. For those who like planning ahead, you can also freeze this casserole either baked or unbaked for up to two months. Just make sure it’s wrapped tightly to prevent freezer burn. Reheat it covered in the oven, and it’s like you’ve made it fresh all over again!
Variations and Substitutions
One of the great joys of this casserole is how easily it can be customized to suit different tastes or dietary needs:
- Meat Variations: Feel free to swap the ground beef with ground turkey or chicken for a lighter version.
- Cheese Options: Not a fan of cheddar? Try mozzarella for a milder taste or a spicy pepper jack to kick things up a notch.
- Dairy-Free: Use plant-based cheese and dairy substitutes for the milk and evaporated milk to cater to dairy-free diets.
- Add-Ins: Feel free to throw in some vegetables like bell peppers or corn for added texture and flavor.
Tips for Picky Eaters and Family Customization
Making dinner that pleases everyone—especially those with strong opinions at the table—can sometimes feel like a high-wire act. Fortunately, this casserole makes it easy to win over even the choosiest family members. Here are a few ideas to keep peace (and empty plates):
- Go Mild or Bold: If your kiddos prefer milder flavors, stick with classic cheddar, or even a mild mozzarella. For those who like a little zip, sprinkle in some sharp cheddar or pepper jack to amp up the flavor.
- Hide Extra Veggies: Shred some carrots or zucchini and tuck them between the potato layers for an extra boost of nutrition that’s almost invisible. You’d be surprised how well finely chopped spinach or red bell peppers blend in, especially once baked.
- Customize the Protein: If you have family members who aren’t keen on red meat, ground turkey or chicken work beautifully as a swap, and make the dish a bit lighter, too.
- Make It Interactive: Let picky eaters sprinkle their own cheese or select their favorite veggie add-ins before you pop the dish in the oven. Giving kids a little control often makes them more excited to dig in.
- Texture Tricks: If soft, cooked onions are a sticking point, try dicing them finely or even swapping for onion powder to lend the flavor without any visible bits.
With a little creativity, this casserole can adapt to fit your family perfectly—making everyone from toddlers to teens (and, yes, grown-ups too) happy around your dinner table.
Each tweak or substitution lets you make this dish truly your own, catering to whatever the occasion or dietary preference might be!
Frequently Asked Questions
What kitchen tools are recommended for making this casserole?
Before you dive in, gather a few trusty tools to make this recipe come together with ease:
- Mandoline Slicer: Ideal for achieving thin, even potato slices (just like Grandma’s impossibly neat layers). If you don’t have a mandoline, a sharp chef’s knife and some patience will do the trick.
- Large Casserole Dish: A 9x13-inch dish works beautifully—plenty of room for generous layers and perfect browning.
- Skillet: To sauté the ground beef and onions until perfectly browned.
- Mixing Bowls: For whisking together your creamy sauce.
- Aluminum Foil: Helpful for covering the casserole to prevent over-browning before it’s set.
- Cheese Grater: If you’re using block cheddar, grate it fresh for that extra-melty payoff.
With your kitchen prepped and ready, you’re just moments away from the ultimate comfort casserole.

Recipe Card
Cheesy Hamburger Potato Casserole
Ingredients
- 1.5 pounds of ground beef
- 1 finely diced yellow onion
- 4 pounds of russet potatoes peeled and sliced into ¼-inch pieces
- 2 cups of grated cheddar cheese
- One 10.75 ounce can of condensed cheddar soup
- One 12 ounce can of evaporated milk
- ½ cup of milk
- ½ teaspoon of garlic powder
- Kosher salt to taste
- Freshly ground black pepper to taste
Instructions
- Oven Preparation: Preheat the oven to 350°F (177°C). Utilize nonstick spray to coat a 9x13-inch baking dish comprehensively. Set aside.
- Meat Sauté: Place ground beef and diced onion into a large skillet over medium-high heat. Season generously with salt and pepper. Cook until the beef is thoroughly browned and no longer pink, ensuring to break up the beef as it cooks. Upon completion, drain any excess fat from the skillet and set the cooked meat aside.
- Assembly of Layers: In the prepared baking dish, arrange a single layer of sliced potatoes. Season each layer with salt and pepper. Follow with a layer comprising ¼ of the cooked beef and onion mixture, and then sprinkle ¼ of the grated cheddar cheese over the beef. Repeat this layering process three more times, ensuring even distribution of ingredients.
- Sauce Preparation: In a small mixing bowl, combine the condensed cheddar soup, evaporated milk, milk, and garlic powder. Whisk these ingredients together until the mixture is smooth and homogenous.
- Baking: Pour the prepared sauce evenly over the assembled layers in the baking dish. Cover the dish tightly with aluminum foil and place it in the preheated oven. Bake for 60 minutes. After this initial baking period, remove the foil and continue to bake for an additional 15 minutes, or until the top layer is visibly golden brown and the sauce is bubbling.
- Serving: Remove from oven and allow the casserole to stand for several minutes before serving to ensure that it sets properly and is safe to consume.

This sounds wonderful, but how about using Yukon Gold or similar kind of potato?
Jennifer Mullins says
WAY too many potatoes. I think it should say 4 potatoes, not 4 lbs of potatoes. Also should have 2 lbs of meat. We cooked it for 2 hours and the 4 lbs of sliced potatoes were still too hard. It looked like all potatoes with a tiny bit of meat. So heavy I could barely carry it. Sauce was good. With the above amendments, I think it would be pretty good.

I decided to try two pounds of Yukon Gold potatoes for this recipe and 1 pound of ground beef, because that is what I had on hand. Cut the potatoes into quarters and then sliced the quarters into 1/4" chunks. Cooked the meat in my Dutch oven, stirred everything together, until well combined, and baked it in the oven. The potatoes cooked perfectly and It was delicious. Came together quickly because I didn't have to take the time to layer it. Served it with cooked frozen peas. Yummy!!!

My mom used to make this for our family of 10, with variations. I loved it. I'm very happy to find this. I will share this.

The flavor was good but I had it in the oven for almost 2 hours and the potatoes still weren't soft. I ended up putting plates of it in the microwave so we could eat. I didn't cut the potatoes thick so I think if I make it again..I will partially precook the potatoes. Was good but disappointing.

Easy

Good, but not great. The Facebook comments noted that the potatoes didn't cook all the way through and ended up "crunchy," so I sliced them at 3/16" instead of 1/4" and added 15 minutes to the baking time. Most of them were tender, but there were still some raw pieces of potato, especially in the center. The sauce separated, but it tasted better than it looked. I ended up with more potato than would fit in the 9 x 13, so I made mashed potatoes with the leftover slices.

This is a followup to my earlier review. I put the partially-eaten casserole back in the oven and cooked it at 350 for 40 more minutes. All the potato slices softened nicely, the excess sauce disappeared, and the appearance even improved: browner and toastier. It tastes much better now. I'm eating each serving with buttery broccoli.

Gwyn Linster says
My hubby and I are foodies. We loved this casserole. It's very delicious and filling. I will be making this many times. Meat, potatoes and cheese, yum!
Gwyn Linster says
I've made this a few times and 3 lbs potatoes was perfect. Also I cooked it on 375 degrees instead of 350 because the first time I made it I had to cook it 40 minutes longer for it to be done. Now I turn the temp up to 400 degrees the last 25 minutes to help it brown on top. I don't slice the potatoes 1/4 inch, instead I slice them thinner using the #2 setting on my mandolin. I also do 2 layers of beef and 3 of potatoes and cheese. Potatoes, beef, cheese. Repeat then the later layer of potatoes followed by cheese. It works best for us. It's a great recipe just needed a few adjustments to suit us.

Oh and 2 lbs meat instead of 1.5 lbs

I used canned sliced potatoes
Perfect. Love it!
