How To Make This Chicken Bacon Ranch Casserole With Potatoes
Making the Chicken Bacon Ranch Casserole with Potatoes is an exercise in simplicity and flavor. Here’s how to whip up this comfort food classic:
- Preparation: Start by boiling your chopped potatoes just until tender—this ensures they maintain their shape and texture in the casserole. While the potatoes cook, toss your chicken pieces in olive oil and a blend of spices to coat them evenly and prepare them for cooking.
- Cooking the Chicken: Achieving perfectly cooked, juicy chicken is crucial; air frying or baking until just done keeps it moist inside.
- Assemble the Casserole: In your greased baking dish, combine the tender potatoes with the seasoned chicken and homemade ranch dressing, creating a base layer of rich flavors.
- Cheese Topping: Layer on the grated cheeses, which will melt into a golden, bubbly crust under the oven’s heat.
- Baking: A quick bake melds all the flavors together and gives the cheese a perfect melt.
- Final Touches: Sprinkle over the crispy bacon and fresh green onions for that essential crunchy texture and a pop of color.

This casserole is as practical as it is delicious, offering excellent storage options. It can be refrigerated for up to four days, making it a fantastic choice for advance meal prep. Variations and Substitutions
This Chicken Bacon Ranch Casserole is wonderfully adaptable to different tastes and dietary needs. Here are a few ideas to make it your own:

- Cheese Choices: If smoked gouda isn’t your style, try mozzarella or provolone for a milder taste.
- Veggie Additions: Mix in broccoli, bell peppers, or mushrooms to sneak some vegetables into the dish.
- Dressing Variations: For a lighter version, substitute Greek yogurt for some of the mayonnaise and sour cream in the ranch dressing. With these tips, you can easily customize the casserole to suit any occasion or palate!

Ingredients
- 2.5 pounds of Yellow or Red potatoes chopped into bite-sized pieces
- 1.5 to 2 pounds of boneless skinless chicken breasts or thighs chopped into bite-sized pieces
- 8 ounces of Sharp cheddar cheese grated
- 4 ounces of Smoked gouda cheese grated
- 1 pound of Cooked crumbled bacon
- Olive oil
- Salt pepper, and garlic blend
- Smoked Paprika
Dressing:
- ½ cup Mayonnaise
- ½ cup Sour cream
- 1 cup Whole milk
- 1 packet Ranch dressing seasoning mix

Instructions
- Begin by boiling the potatoes in a large pot until they achieve a tender consistency. Once cooked, drain and set aside.
- Place the chicken in a mixing bowl and drizzle with olive oil. Season with salt, pepper, garlic blend, and smoked paprika. Stir thoroughly to ensure each piece is evenly coated.
- Proceed to cook the chicken. If using an air fryer, set it to 400 degrees Fahrenheit and cook for approximately 8 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit.
- In a separate bowl, combine the mayonnaise, sour cream, whole milk, and Ranch dressing seasoning mix. Whisk together until the dressing is smooth.

This was delicious as is. I added a bag of fresh spinach chopped up finely just to get some more veggies and it tasted great also. This recipe is definitely a keeper.

I made this for dinner tonight and it was a hit. I was a little annoyed that there weren't specific measurements for the olive oil, salt, pepper, garlic, and smoked paprika and no specified oven temp because I'm not a chef. However, I used my best judgement and it turned out great. My chicken was a bit over the 165 mark after air frying and my potatoes were just a tad more tender than I wanted after boiling, so I mixed everything and put it in the oven at 350°F for 15 minutes and it was just right.
