Ingredient Notes
Each ingredient in our Chicken Piccata with Lemon Sauce plays a pivotal role in crafting the final delectable dish.
- Chicken Breast: Opt for evenly sized breasts to ensure uniform cooking. Flattening them to a ¼-inch thickness helps in quick and even cooking.
- Egg Substitute and Flour: These components help in creating a crispy outer layer that locks in the juiciness of the chicken.
- Lemon Juice and White Wine: These acidic elements add a bright, tangy flavor that cuts through the richness of the Parmesan and butter, balancing the dish beautifully.
- Parmesan Cheese: Choose a high-quality Parmesan for a deeper flavor impact. Freshly grated cheese melts better and integrates smoothly into the coating.
How To Make Chicken Piccata with Lemon Sauce
Let’s break down the cooking process into detailed steps to ensure you can recreate this delicious dish effortlessly at home.
- Step 1: Start by preparing the chicken. Flatten the chicken breasts to ensure they cook evenly and absorb the marinade well. Dredging them first in the seasoned flour mix then dipping in the egg mixture before a final flour coat gives the chicken a deliciously crispy exterior once cooked.
- Step 2: Cooking the chicken requires attention to heat management. Brown the chicken in batches to avoid overcrowding the pan, which ensures each piece gets a beautifully golden-brown crust.
- Step 3: The sauce is what ties this dish together. Using the same pan, melt butter and then deglaze with the remaining wine and lemon juice. Let it boil until reduced to enhance the flavors. This sauce, when drizzled over the cooked chicken, adds moisture and a zesty sharpness that elevates the dish.
Storage Options
Once cooked, Chicken Piccata can be stored in an airtight container in the refrigerator for up to three days. For longer storage, you can freeze it. Freeze the chicken and sauce separately, if possible, to maintain the best texture upon reheating. Thaw in the refrigerator overnight and reheat gently to avoid drying out the chicken.
Variations and Substitutions
While traditional Chicken Piccata is delightful, here are some creative twists you can apply to tailor the recipe to your taste or dietary needs.
- Broth Instead of Wine: If you prefer not to cook with alcohol, chicken broth makes a fine substitute, maintaining the moisture and enhancing the sauce's flavor.
- Gluten-Free Option: Swap all-purpose flour for a gluten-free flour blend to cater to those with gluten sensitivities without compromising on texture.
- Vegan Adaptation: For a plant-based version, use firm tofu slices instead of chicken, and swap out the Parmesan and butter for vegan alternatives. This version maintains the essence of the dish while making it accessible to those on a vegan diet.
- Herb Variations: Feel free to experiment with different herbs like thyme or basil to introduce new flavors to the dish, making it uniquely yours each time you prepare it.
Recipe Card
Chicken Piccata with Lemon Sauce
Ingredients
- 8 halves of boneless skinless chicken breasts, approximately 4 ounces each
- ½ cup of egg substitute
- 2 tablespoons plus an additional ¼ cup of dry white wine or chicken broth, divided
- 5 tablespoons of lemon juice divided
- 3 cloves of garlic finely minced
- ⅛ teaspoon of hot pepper sauce
- ½ cup of all-purpose flour
- ½ cup of finely grated Parmesan cheese
- ¼ cup of freshly minced parsley
- ½ teaspoon of salt
- 3 teaspoons of olive oil divided
- 2 tablespoons of unsalted butter
Instructions
- Preparation of Chicken: Begin by ensuring each chicken breast half is of uniform thickness, approximately one-quarter inch. This is crucial for even cooking and optimal flavor absorption. Utilize a shallow dish to combine the egg substitute, two tablespoons of wine, two tablespoons of lemon juice, minced garlic, and hot pepper sauce. In a separate shallow dish, combine the all-purpose flour, grated Parmesan cheese, minced fresh parsley, and salt.
- Coating and Browning the Chicken: Coat each chicken breast half in the flour mixture, ensuring a light but complete coverage. Following this, dip each coated breast into the egg mixture, and then recoat with the flour mixture. Heat one and a half teaspoons of olive oil in a large nonstick skillet over medium heat. Place four chicken breast halves in the skillet and cook for 3 to 5 minutes on each side, or until the chicken is golden brown and the juices run clear. Transfer the cooked chicken to a warm plate and cover to keep warm. Discard any drippings from the skillet, add the remaining oil, and repeat the process with the remaining chicken halves.
- Sauce Preparation: After all the chicken has been cooked and set aside, melt the unsalted butter in the same skillet. Add the remaining quarter cup of wine and remaining lemon juice to the skillet. Bring the mixture to a boil over medium-high heat, and continue to boil, uncovered, until the sauce has reduced by approximately one-fourth. This reduction concentrates the flavors and creates a more cohesive sauce.
- Final Assembly: Once the sauce has reduced, gently drizzle it over the cooked chicken breasts. This not only adds flavor but also helps to keep the chicken moist and delicious. Serve immediately, ensuring that the chicken is both visually appealing and aromatically enticing.
