Ingredient Notes

Let’s talk about the stars of the show and why they matter:

• Olive Oil: The base for sautéing the veggies, it adds a subtle richness and helps build flavor.
• Yellow Onion, Carrots, and Celery: This classic trio (aka mirepoix) forms the aromatic foundation of the soup.
• Garlic: Because no soup is complete without that punch of savory goodness.
• Kosher Salt and Black Pepper: Essential for seasoning—don’t skimp!
• Low-Sodium Chicken Broth: Using low-sodium broth lets you control the saltiness of the dish.
• Shredded Chicken: Cooked rotisserie chicken works wonders for saving time, but feel free to use leftover grilled or baked chicken.
• Fresh Thyme: Adds a subtle earthy note that elevates the soup’s flavor profile.
• Potato Gnocchi: The star of the show! These little dumplings soak up the broth and add a delightful chewiness.
• Baby Spinach: Packed with nutrients and color, it wilts perfectly into the soup.
• Half-and-Half: The secret to that creamy, luxurious texture.

How To Make Copycat Olive Garden Chicken Gnocchi Soup

Let’s break it down step by step:

1. Sauté the Veggies: Heat olive oil in a Dutch oven or heavy-bottomed pot over medium heat. Add the onion, carrots, celery, garlic, salt, and pepper. Cook until the veggies are softened and fragrant, about 5 minutes. This step builds the flavor base, so don’t rush it!
2. Add Broth and Chicken: Stir in the chicken broth, shredded chicken, and fresh thyme. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes. This allows the flavors to meld and the chicken to soak up all that deliciousness.
3. Incorporate Gnocchi and Spinach: Add the gnocchi, spinach, and half-and-half. Cook for 2-3 minutes, just until the gnocchi is tender and the spinach is wilted. Be careful not to overcook the gnocchi—they should be pillowy, not mushy.
4. Serve Immediately: Ladle the soup into bowls and enjoy while it’s hot. Pro tip: Pair it with a side of crusty bread for the ultimate comfort meal.

Storage Options

This soup is just as good the next day (if it lasts that long!). Here’s how to store it:

• Refrigerator: Let the soup cool completely, then transfer it to an airtight container. It will keep in the fridge for up to 3 days.
• Freezer: If you want to freeze it, skip the half-and-half and add it when reheating. Store in a freezer-safe container for up to 2 months.
• Reheating: Warm the soup on the stovetop over medium heat, stirring occasionally. If it’s too thick, add a splash of broth or water to loosen it up.

Variations and Substitutions

This recipe is incredibly forgiving, so feel free to get creative:

• Vegetarian Version: Swap the chicken broth for vegetable broth and omit the chicken. Add extra veggies like mushrooms or zucchini for heartiness.
• Dairy-Free: Use coconut milk or a plant-based creamer instead of half-and-half.
• Gluten-Free: Look for gluten-free gnocchi or substitute with small diced potatoes.
• Spice It Up: Add a pinch of red pepper flakes or a dash of hot sauce for a little kick.
• Protein Swap: Replace the chicken with cooked turkey, shrimp, or even tofu.
