Ingredients Notes
To bring out the best in our Cozy Autumn Wild Rice Soup, each ingredient has been chosen to contribute depth and flavor. Here are some notes on key ingredients:
- Wild Rice: Opt for high-quality wild rice that promises a firm texture and a slightly nutty flavor, which is the backbone of this soup.
- Mushrooms: Whether you choose Baby Bella or classic white, mushrooms add a meaty texture and earthy flavor that’s irreplaceable.
- Fresh Herbs: Rosemary and thyme are more than just seasonings; they are aromatic essentials that infuse the soup with a burst of freshness and a hint of the forest.
- Creamy Elements: A combination of milk and half-and-half adds a luxurious creaminess to the broth, making it rich but not overly heavy.
How To Make Cozy Autumn Wild Rice Soup
Creating the Cozy Autumn Wild Rice Soup is like painting a landscape with flavors and textures. Here’s how to bring this masterpiece to your table:
- Step 1: Cook the Wild Rice: Start by boiling your wild rice in chicken broth until it’s just tender. Keeping an eye on the broth level ensures the rice cooks perfectly without sticking or burning.
- Step 2: Sauté the Vegetables: In a separate pot, heat olive oil and butter, then add your chopped onions, carrots, celery, and mushrooms. The key here is to sauté until they’re just softened—this builds a flavor base that’s robust and aromatic.
- Step 3: Roux and Broth: Introduce flour to your sautéed vegetables, stirring consistently to blend it smoothly. This is crucial for a thick, creamy texture. Then, pour in more chicken broth and let it simmer to thicken.
- Step 4: Combine and Simmer: Add your cooked rice to the thickened broth, followed by milk and half-and-half for that creamy finish. Let everything meld together on a low simmer.
- Step 5: Serve and Enjoy: Once everything is heated through and the flavors are married, ladle the hot soup into bowls and serve it up with a smile.
Storage Options
Our Cozy Autumn Wild Rice Soup is not only delicious fresh but also stores wonderfully. It can be kept in the refrigerator for up to 3-4 days, making it a fantastic make-ahead meal for busy weeks. For longer storage, freeze the soup in airtight containers or heavy-duty freezer bags for up to 2 months. Just remember, the cream may separate slightly when reheated, but a good stir should bring it all back together.
Variations and Substitutions
Our Cozy Autumn Wild Rice Soup is versatile and forgiving, making it easy to customize based on your pantry and preference:
- Rice Alternatives: If wild rice isn’t available, feel free to use brown rice or even barley as a hearty substitute.
- Vegetarian Version: Swap chicken broth for vegetable broth and skip the half-and-half for a plant-based cream to cater to vegetarian guests.
- Dairy-Free Adjustments: For a dairy-free version, use almond milk or oat milk instead of cow’s milk and a plant-based creamer instead of half-and-half.
- Spice It Up: Add a pinch of cayenne or a dash of smoked paprika for a soup that has a bit more kick.
Recipe Card
Cozy Autumn Wild Rice Soup
Ingredients
- 10 ounces of wild rice
- 11-12 cups of low sodium chicken broth divided
- ¼ cup of olive oil
- ¼ cup of unsalted butter
- ½ of a large onion finely chopped
- 4 large carrots finely chopped
- 3 large stalks of celery finely chopped
- 3 cloves of garlic minced
- 16 ounces of mushrooms sliced (white or Baby Bella variety)
- Kosher salt to taste
- Freshly ground black pepper to taste
- 1 teaspoon of onion powder
- 1 teaspoon of dried rosemary
- 1 teaspoon of dried thyme
- ¾ cup of all-purpose flour
- 1 ½ cups of milk
- ½ cup of half and half
Instructions
- Preparation of Wild Rice: In a medium stockpot, bring 3 cups of chicken broth to a vigorous boil. Introduce the wild rice, then lower the heat to a moderate simmer. Securely place the lid on the pot and allow the rice to cook until it reaches an al dente texture, typically around 45-50 minutes, occasionally checking to ensure sufficient broth levels and to prevent the bottom from scorching. If necessary, add a small amount of broth. Once cooked, fluff the rice with a fork and set aside.
- Sautéing Vegetables: In a larger stockpot, combine olive oil and butter and heat over medium settings. Add the chopped onions, carrots, celery, and sliced mushrooms to the pot. Season with onion powder, rosemary, thyme, kosher salt, and black pepper. Sauté the mixture for approximately 5-6 minutes, or until the vegetables begin to soften. Incorporate the minced garlic in the final 30 seconds to avoid burning.
- Creating the Roux: Sprinkle the all-purpose flour over the sautéed vegetables, stirring continuously for about 3 minutes to fully integrate the flour without clumping.
- Thickening with Broth: Gradually add around 8 cups of chicken broth to the vegetable and flour mixture, increasing the heat to bring the mixture to a boil. Once boiling, reduce the heat to maintain a gentle simmer, stirring consistently until the mixture thickens, which should take about 15-20 minutes.
- Final Assembly: Add the previously cooked wild rice to the thickened mixture, followed by the milk and half and half. Continue to simmer the entire concoction for an additional 10-15 minutes, allowing the flavors to meld.
- Serving: Serve the soup promptly while hot, ensuring it is thoroughly heated and well-combined.
