- Heavy Cream: Adds that luxurious creamy texture that beautifully balances the vibrant pesto.

- Seasonings: Simple Italian seasoning, salt, and pepper enhance the natural flavors without overpowering them.
How To Make Creamy Garlic Pesto Chicken
Let’s dive into making your Creamy Garlic Pesto Chicken, broken down into detailed steps for a foolproof cooking experience:
- Preparation of Chicken: Start by heating olive oil in a large skillet. Season the chicken strips with Italian seasoning, salt, and pepper, then cook them until golden and cooked through. This not only flavors the chicken but ensures it’s deliciously tender.
- Sauce Mixture: Whisk together heavy cream, chicken broth, and pesto in a bowl. This mixture will form the creamy, flavorful base of your sauce.
- Cooking Vegetables: In the same skillet, sauté onions until soft, then add garlic and sun-dried tomatoes for a fragrant lift. Following this, add bell peppers and cook until tender, which introduces a sweet contrast to the rich sauce.
- Combining Elements: Pour the creamy pesto mixture into the skillet and bring to a simmer, allowing the flavors to meld. Return the chicken to the skillet and simmer until the sauce thickens and the chicken is well-coated and heated through.
- Garnishing: Finish with a sprinkle of fresh basil and grated Parmesan for an extra touch of freshness and a hint of sharpness, enhancing the creamy texture of the sauce.
Storage Options
For those times you find yourself with leftovers of Creamy Garlic Pesto Chicken, here’s how to keep them:
- Refrigerate: Store in an airtight container for up to 3 days. Reheat gently on the stove or in the microwave, adding a splash of cream if the sauce has thickened too much.
- Freeze: For longer storage, freeze portions in airtight containers for up to a month. Thaw overnight in the refrigerator before reheating.

- 3 cloves of garlic minced
- ½ cup of sun-dried tomatoes preserved in oil drained and finely chopped
- 2 small bell peppers any color, sliced into thin, long strips
- ½ cup of heavy cream
- ½ cup of low sodium chicken broth
- 3 tablespoons of basil pesto
- Fresh basil chopped, for garnishing
- Parmesan cheese grated, for garnishing
Instructions
- Begin by heating 1 tablespoon of olive oil in a large, 12-inch nonstick skillet over medium heat.
- Season the chicken strips with Italian seasoning, salt, and black pepper. Place the seasoned chicken in the skillet and cook for approximately 7 to 8 minutes, or until the chicken is thoroughly cooked. Once done, remove the chicken from the skillet and set it aside.
- In a small mixing bowl, combine the heavy cream, chicken broth, and basil pesto. Whisk these ingredients together until the mixture is well blended. Set aside.
- Return the skillet to the stove and add the remaining 1 tablespoon of olive oil. Add the diced onions to the skillet and sauté for about 2 minutes. Following the onions, incorporate the minced garlic and chopped sun-dried tomatoes into the skillet, cooking for an additional 30 seconds over medium-high heat, or until the mixture becomes fragrant.
- Introduce the sliced bell peppers to the skillet, continuing to cook for approximately 4 minutes, or until the peppers are tender to the fork.
- Pour the previously prepared pesto sauce mixture into the skillet, and bring to a simmer, allowing the flavors to combine.
- Add the previously cooked chicken back into the skillet, simmering for an additional 2 minutes to ensure the chicken is heated through and the sauce slightly thickens. Season with additional salt and pepper according to taste.
