Ah, Frozen S’mores! Every bite takes me back to those carefree summer days at my grandparent's cottage by the lake. My grandma, a wizard in the kitchen, concocted these during one particularly sweltering summer when the idea of a warm s'more by the fire was far too much to bear. What started as an experiment quickly turned into a family favorite, with everyone, young and old, waiting impatiently by the freezer, spoons in hand. Now, whenever I whip up a batch, I’m transported back to those lazy, laughter-filled evenings by the lake, cooling off with a treat that’s as sweet as those precious memories.

How To Make Frozen s’mores
This Frozen S’mores recipe is a delightful twist on a traditional favorite, requiring no baking and simple assembly. It’s perfect for those who want the flavor of s’mores without the heat of a fire. Let's dive into the steps to make your own frozen delight.
- Step 1: Prepare your ingredients. Thaw the whipped topping and let the heavy cream and cream cheese soften at room temperature. Line your baking pan with parchment paper for easy removal of the frozen dessert.
- Step 2: Layer the graham crackers at the bottom of the pan. This will form the base of your Frozen S’mores.
- Step 3: Create the marshmallow layer by mixing cream cheese and marshmallow crème until smooth, then fold in part of the whipped topping. Spread this mixture over the graham crackers.
- Step 4: Next, prepare the chocolate pudding layer by whisking together heavy cream and pudding mix until smooth, then fold in the remaining whipped topping. Spread this over the marshmallow layer and top with another layer of graham crackers.
- Step 5: Freeze the assembled layers until firm. Once frozen, use the parchment paper sling to lift out the dessert, cut into squares, and serve!
Storage Options
For optimum freshness and texture, Frozen S'mores should be stored in the freezer. They can be kept in an airtight container or wrapped in plastic wrap to avoid freezer burn and maintain their delicious taste. Ideally, consume within one month for best quality.
Variations and Substitutions
- Flavored Pudding: Swap the chocolate pudding mix for another flavor like vanilla or butterscotch for a different twist on the classic s’more.
- Biscuit Base: Replace graham crackers with other types of biscuits or even chocolate chip cookies for extra flavor.
- Add-ins: Consider adding slices of banana or a sprinkle of cinnamon to the layers for extra flair.
- Dairy-Free Options: Use dairy-free alternatives for whipped topping, cream cheese, and heavy cream to cater to dietary restrictions.
Recipe Card
Frozen s’mores
Ingredients
- One 8-ounce container of frozen whipped topping thawed (e.g., Cool Whip)
- Three cups of heavy cream
- Four ounces of cream cheese
- Fifteen full-size graham crackers approximately 8.3 ounces, divided
- One 5.9-ounce package of instant chocolate pudding mix
- One approximately 7-ounce jar of marshmallow crème e.g., Marshmallow Fluff
Instructions
- Initial Preparation: Begin by ensuring that the 8-ounce container of frozen whipped topping is completely thawed. Allow the three cups of heavy cream and four ounces of cream cheese to reach room temperature until the cream cheese is sufficiently softened, which typically requires about 45 minutes. Meanwhile, prepare a 9x13-inch baking pan by lining it with two sheets of parchment paper. These sheets should be positioned perpendicular to each other, extending about two inches over all four sides of the pan to create a sling for easier removal of the dessert.
- Layering the Base: Break eight of the full-size graham crackers in half. Arrange these pieces in a single layer at the bottom of the prepared pan, ensuring they are touching. It is not necessary for the crackers to completely cover the pan.
- Marshmallow Layer: Place the cream cheese and the entire contents of the marshmallow crème jar into the bowl of a stand mixer (alternatively, a large bowl and an electric hand mixer may be used). Beat these ingredients with the paddle attachment on medium speed until the mixture is smooth and well combined, about 30 seconds. Incorporate two cups of the whipped topping into this mixture, folding gently until just combined. Dollop this marshmallow mixture onto the arranged graham crackers, spreading it into an even layer.
- Chocolate Layer: Without needing to clean the bowl, combine the heavy cream with the instant chocolate pudding mix in the same mixing bowl. Whisk these together until the mixture is smooth and homogenous. Fold in the remaining one cup of whipped topping until just combined. Spread this chocolate pudding mixture evenly over the marshmallow layer.
- Final Assembly: Break the remaining seven graham cracker sheets in half, and arrange these along with the remaining graham cracker half in a single layer over the chocolate pudding mixture. This completes the assembly of the layers.
- Freezing: Cover the pan and place it in the freezer. Freeze the dessert until it is firm, which will take a minimum of six hours.
- Serving: Once the dessert has set and is firm, use the overhanging parchment paper to lift the frozen slab out of the pan onto a cutting board. Cut the slab into 15 squares, using the graham crackers as a guide for even portions.
