Recipe Card
Lemon Crinkle Cookies
Ingredients
- Two large eggs
- One-third cup of vegetable oil
- One package of lemon-flavored cake mix
- Zest from one whole lemon
- One-half cup of powdered sugar
Instructions
- Preparation of Oven and Baking Sheets: Initiate by preheating the oven to a temperature of 375 degrees Fahrenheit. Concurrently, align two baking sheets with parchment paper or silicone baking mats to ensure non-stick properties and ease of removal post-baking.
- Dough Formation: In a sizable mixing bowl, commence by integrating the eggs, vegetable oil, the entire package of lemon-flavored cake mix, and the freshly obtained zest from one lemon. Continue to blend these components until a uniform dough is established, indicative of a successful amalgamation of ingredients.
- Coating Process: Proceed by depositing the powdered sugar into a shallow dish or bowl. Utilize a mini ice cream scoop, or an equivalent instrument capable of measuring approximately two tablespoons, to extract portions of the cookie dough. Each portion should then be meticulously rolled within the powdered sugar to achieve an even coating, a crucial step for texture and flavor enhancement.
- Baking: Place the now-coated dough portions onto the prepared baking sheets, ensuring adequate spacing to accommodate potential spread during the baking process. Insert into the preheated oven and bake for a duration of seven to nine minutes. The criterion for completion is the attainment of a set state by the cookies, characterized by the absence of doughiness and the acquisition of a firm yet not overly hard texture.
- Cooling: Upon removal from the oven, allow the cookies to reside momentarily on the baking sheets. This brief resting period facilitates the initial stage of cooling and solidification, preventing potential disintegration during transfer. Following this, relocate the cookies to a cooling rack, where they are to be left undisturbed until they reach room temperature, thus concluding the baking process.
