Ingredients Notes
When crafting the Marry Me Chicken Tortellini, each ingredient plays a pivotal role in creating a harmonious dish:
- Chicken: Opt for boneless breasts to keep the dish lean and easy to eat. Cutting them into bite-sized pieces ensures they cook evenly and absorb more sauce.
- Cheese Tortellini: Fresh tortellini not only saves prep time but also enhances the dish's gourmet feel with its tender texture and cheesy filling.
- Cooking Cream: A higher fat content in the 35% cooking cream lends a velvety richness to the sauce, making it irresistibly smooth.
- Sundried Tomatoes: These add a chewy texture and a concentrated burst of tomato flavor that intensifies the overall taste of the dish.
- Fresh Greens: Spinach and basil are not just for color; they add freshness and a slight peppery bite that cuts through the richness of the sauce.
How To Make Marry Me Chicken Tortellini
Creating the Marry Me Chicken Tortellini is like orchestrating a symphony in your kitchen. Here’s how to bring this culinary masterpiece to life:
- Preparation: Start by combining the cornstarch, paprika, and salt in a bowl. This mixture will not only flavor your chicken but also help thicken the sauce later.
- Chicken: Toss the chicken pieces in the seasoning mix until well-coated, ensuring each piece is fully dressed for the occasion.
- Cooking the Chicken: Heat olive oil in a pan and introduce your seasoned chicken to the heat. Cook until golden and no longer pink in the center. Remove and set aside, making room for the next act.
- Building the Base: Lower the heat slightly and add a bit more oil to sauté the minced garlic. This is where the magic starts, as the garlic releases its aromatic qualities into the oil.
- Deglazing: Pour in chicken broth, increasing the heat to scrape up any delicious bits from the pan, which are key to the depth of flavor in your sauce.
- Sauce Simmering: Introduce the tomato paste, passata, cream, and other seasonings, bringing your sauce to a simmer to meld the flavors.
- Pasta Time: While your sauce simmers, boil the tortellini until just tender. Drain and set aside.
- Combining Forces: Add the chicken back to the sauce, followed by the tortellini, ensuring both are generously coated with your velvety sauce.
- Final Touches: Stir in the chopped spinach and basil, allowing them to wilt and infuse their freshness into the dish.
- Serve: Spoon the rich, creamy concoction into bowls and sprinkle with cheese, ready to win hearts and stomachs alike.
Storage Options
For those rare occasions when there are leftovers of Marry Me Chicken Tortellini, storing them properly ensures they remain just as enchanting the next day:
- Refrigerator: Keep in an airtight container for up to three days.
- Freezer: For longer storage, freeze portions in airtight containers for up to a month, though be mindful that the texture of the tortellini may change slightly upon reheating.
Variations and Substitutions
Every palate is unique, and so the Marry Me Chicken Tortellini can be tailored to suit any dietary preference or pantry limitation:
- Gluten-Free: Swap regular tortellini for a gluten-free variety to accommodate those with sensitivities without sacrificing taste.
- Vegetarian Version: Omit the chicken and double the spinach, or add sautéed mushrooms for a hearty vegetarian alternative.
- Dairy-Free: Use coconut cream in place of cooking cream and opt for dairy-free cheese tortellini to make this dish vegan-friendly.
- Spice Adjustments: For those who prefer a milder taste, reduce or omit the chili flakes, or add more if you love a spicy kick.
This recipe not only feeds the stomach but also nurtures the soul, making every dinner an occasion to remember.

Marry Me Chicken Tortellini
Ingredients
For the Chicken Seasoning:
- 2 tablespoons of cornstarch
- 1 teaspoon of sweet paprika
- ¼ teaspoon of coarse sea salt
For the Chicken and Sauce:
- 2 tablespoons of extra-virgin olive oil plus additional as needed for sautéeing garlic
- 3 boneless chicken breasts 6.5 ounces each, cut into bite-sized pieces
- 3 cloves of garlic finely minced
- 1 tablespoon of tomato paste
- ¼ cup of passata
- 1 cup of unsalted chicken broth
- 1 cup of 35% cooking cream
- ½ cup of sundried tomatoes roughly chopped
- 1 teaspoon of dried oregano
- ¼ teaspoon of coarse sea salt
- ¼ teaspoon of red chili flakes
For the Tortellini and Greens:
- 21 ounces of fresh cheese tortellini typically found in the refrigerated section of the grocery store
- 2 cups of fresh spinach washed and roughly chopped
- ¼ cup of fresh basil washed and roughly chopped
Instructions
- Prepare the Chicken Seasoning: In a small mixing bowl, combine cornstarch, paprika, and salt. Stir until evenly mixed.
- Season the Chicken: Place chicken pieces in a medium-sized mixing bowl. Sprinkle the prepared seasoning over the chicken and toss to ensure each piece is thoroughly coated. Set aside.
- Heat the Oil: In a 3.5-quart braiser or equivalent pan, heat the olive oil over medium heat. Allow the oil to warm for 2 minutes to ensure optimal cooking temperature.
- Sauté the Chicken: Add the seasoned chicken to the pan. Cook, stirring occasionally, until the chicken is fully cooked and reaches an internal temperature of 165 degrees Fahrenheit, approximately 8-10 minutes. Once cooked, transfer the chicken to a separate plate and keep warm.
- Prepare the Garlic: Reduce the heat to medium-low. If necessary, add a small amount of olive oil to the pan. Add the minced garlic and sauté until fragrant, about 30 seconds, being careful not to burn it.
- Deglaze the Pan: Increase the heat to medium and add the chicken broth to the pan. Use a wooden spoon to scrape the bottom of the pan to release all the cooked-on bits, which add flavor to the sauce.
- Cook the Tortellini: Meanwhile, bring a large pot of water to a boil. Add tortellini and cook according to the package directions until al dente. Drain and set aside.
- Add Sauce Ingredients: To the pan with the garlic, add the tomato paste, passata, cooking cream, sundried tomatoes, oregano, salt, and chili flakes. Stir well to combine. Bring the mixture to a boil.
- Simmer the Sauce: Once boiling, reduce the heat to low and let the sauce simmer for 5-8 minutes, stirring occasionally to prevent sticking.
- Combine Chicken and Sauce: Add the cooked chicken back into the sauce, stirring to coat the chicken evenly.
- Add Cooked Tortellini: Incorporate the cooked tortellini into the pan, mixing gently to coat the pasta thoroughly with the sauce.
- Incorporate Greens: Add the chopped spinach and basil to the pan. Stir until the greens are just wilted and well integrated into the dish.

This was delicious! Followed the recipe to the letter and everything was perfect; it came together quickly, too, which surprised me. My family of four devoured it... husband said "this is a keeper" and 13 yo said "I want to eat this every night." That's a slam dunk of a recipe in my book 🙂
