Ingredient Notes

Before we get cooking, let’s talk about the stars of the show. Here’s why each ingredient in Marry Me Chicken with Risoni plays a crucial role:

• Chicken Breast: Boneless and skinless for easy prep, it’s the protein-packed base of the dish. Cutting it into cubes ensures quick, even cooking.
• Sun-Dried Tomatoes: These little gems add a sweet, tangy punch and a pop of color. Make sure to drain them well to avoid excess oil.
• Garlic: Because what’s a Tuscan-inspired dish without garlic? It’s the flavor backbone of the recipe.
• Italian Seasoning & Paprika: This dynamic duo brings warmth and depth to the dish, making it taste like it’s been simmering for hours.
• Orzo (Risoni): This rice-shaped pasta soaks up all the delicious flavors and adds a satisfying texture.
• Coconut Milk or Heavy Cream: Choose your adventure! Coconut milk adds a subtle sweetness, while heavy cream brings classic richness.
• Spinach: Fresh spinach wilts beautifully into the dish, adding a touch of green and a boost of nutrients.
• Parmesan Cheese: The finishing touch that brings everything together with its nutty, salty goodness.

How To Make Marry Me Chicken with Risoni

Ready to whip up a dish that’s as easy as it is impressive? Let’s break it down step by step:

1. Prep the Chicken: Start by patting the chicken breasts dry with a paper towel. This helps them sear nicely. Slice them into bite-sized cubes and set aside.
2. Heat the Skillet: Place a large skillet over medium heat and add the olive oil. Let it heat up until it shimmers—this is your cue to add the chicken.
3. Cook the Chicken: Toss the chicken cubes into the skillet and let them cook for 2-3 minutes until the edges start to turn golden. Don’t worry about cooking them through just yet; they’ll finish cooking later.
4. Add the Flavor Boosters: Throw in the sun-dried tomatoes, garlic, Italian seasoning, paprika, salt, and pepper. Stir everything together and let it cook for another 3-4 minutes. Your kitchen should smell amazing by now!
5. Incorporate the Orzo and Broth: Add the orzo and chicken broth to the skillet, giving it a good stir to combine. Reduce the heat to medium, cover the pan, and let it simmer for 12 minutes. Be sure to stir occasionally to prevent the orzo from sticking.
6. Creamy Finish: Once the orzo is cooked, stir in the coconut milk (or heavy cream) and spinach. Let the spinach wilt into the sauce, which should now be luxuriously creamy.
7. Cheese, Please: Finally, sprinkle in the freshly grated parmesan cheese and give it one last stir. The cheese will melt into the sauce, creating a gooey, irresistible texture.
8. Serve and Enjoy: Remove the skillet from the heat, dish it up, and get ready for the compliments to roll in.

• Freezer: While you can freeze this dish, the creamy sauce may separate slightly upon thawing. If you do freeze it, store it in a freezer-safe container for up to 2 months. Reheat gently on the stove, stirring frequently.
