Ingredient Notes
Not all ingredients are created equal! Pro tips for flavor fireworks:
- Pistachios: Use unsalted, roasted ones. Raw nuts = sad, bland cookies. Save time with pre-roasted!
- Honey: Go for robust varieties like buckwheat or wildflower. Skip clover honey—it’s too mild.
- Butter: European-style (82% fat) makes them luxuriously rich. Cold butter = thicker cookies!
- Salt: Flaky Maldon > kosher salt. It’s pricier but so worth it.
- Sugar: Light brown sugar adds moisture. Swap dark brown for caramel vibes!

How To Make Salted Honey Pistachio Cookies
- Toast Pistachios: Toss 1 cup pistachios in 1 teaspoon honey + pinch of salt. Bake at 350°F (175°C) for 5 mins. Cool completely—warm nuts melt butter!
- Cream Butter & Sugars: Beat ½ cup butter, ¼ cup honey, ½ cup brown sugar, and ¼ cup white sugar until fluffy (2 mins). Add 1 egg + 2 teaspoon vanilla.
- Dry Mix Whisk: Combine 1.5 cups flour, 1 teaspoon cornstarch, ½ teaspoon baking soda, ½ teaspoon salt. Fold into wet mix.
- Fold & Chill: Chop cooled pistachios, mix into dough. Chill dough 30 mins (or freeze 15!).
- Bake & Salt: Scoop 2-tbsp balls onto parchment paper. Bake 10-12 mins. Sprinkle with salt immediately after pulling from the oven.
✨ Pro Tips
- Chill Your Dough: Skipping this? Cookies spread like gossip. 30 mins = perfect thickness!
- Underbake Slightly: Pull them out when edges are golden but centers look doughy. They firm up!
- Salt Strategically: Use fingertips—don’t dump! 3 flakes per cookie is ideal.
- Parchment Paper = MVP: No sticking, even browning. Foil = crispy bottoms.
Storage & Reheating
These stay divine for days (if they last that long!):
- Room Temp: Store in airtight container (layered with parchment) for 5 days.
- Freeze Dough: Roll balls, freeze raw. Bake straight from freezer (+2 mins bake time).
- Revive Stale Cookies: Microwave 8 secs OR place in a bread box with a damp paper towel overnight.
- Freeze Baked Cookies: Seal in ziplocks for 3 months. Thaw at room temp—or eat frozen (no judgment).
Variations & Substitutions
Mix it up! All versions rock:
- Gluten-Free: Swap flour for 1:1 GF blend (like Bob’s Red Mill). Add ½ teaspoon xanthan gum.
- Vegan: Use plant butter (Miyoko’s) + flax egg (1 tablespoon flax + 3 tablespoon water). Agave = honey swap!
- Nut-Free: Sunflower seeds or pepitas! Toast with honey as directed.
- Extra Fancy: Drizzle melted white chocolate post-bake. Add orange zest to dough!
- Lower Sugar: Reduce brown sugar to ⅓ cup. Honey’s sweetness shines!
Serving Suggestions
These cookies are delicious on their own, but also pair wonderfully with:
- A glass of cold milk
- Vanilla ice cream for a decadent ice cream sandwich
- Afternoon tea or coffee
Look, I don’t throw around “life-changing” lightly… but these cookies? They’re it. That moment when warm honey, toasty nuts, and salty crunch hit your tongue? Pure bliss. They’re easy enough for weeknight cravings yet chic enough to impress your mother-in-law (trust me). Whether you’re gifting them or gobbling solo, this recipe is your golden ticket to cookie stardom. Ready. Set. BAKE! 🍪💚
FAQ
Can I use salted pistachios?
Please don’t! We control salt levels. Pre-salted nuts + sea salt = sodium overload.
Why did my cookies spread too much?
Butter was too warm! Chill dough + use cool baking sheets. Also, check your baking soda’s freshness.
Can I use maple syrup instead of honey?
Yes, but flavor shifts earthy. Reduce to 3 tbsp—maple’s thinner than honey!
How do I get THICK cookies?
Chill dough + roll tall balls (not flat!).
Can I add chocolate?
Resist! Honey-pistachio is a delicate dance. But if you must, use white chocolate chunks.
Recipe Card
Salted Honey Pistachio Cookies
Ingredients
- 1 cup 226g butter
- ½ cup 100g light brown sugar, packed
- ¼ cup 50g granulated sugar
- ½ cup 170g honey
- 1 large egg at room temperature
- 1 tablespoon pure vanilla extract
- 1 teaspoon coarse sea salt
- 1 teaspoon baking soda
- 2 ½ cups 312g all-purpose flour
- 1 cup 125g roasted pistachios, roughly chopped
- 1 cup 170g white chocolate chips
Instructions
- Place butter in a medium saucepan over medium-low heat and melt completely
- Continue cooking the butter, swirling occasionally, until it foams and then turns amber in color with a nutty aroma (about 5-6 minutes)
- Remove from heat immediately and transfer to a heat-safe bowl to cool for 20-30 minutes (the butter should still be liquid but not hot)
- While the butter cools, preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper
- In the bowl of a stand mixer fitted with the paddle attachment, combine the cooled browned butter with both sugars
- Mix on medium speed for 1 minute until well combined (it won't be fluffy since the butter is liquid)
- Add the honey, egg, vanilla extract, sea salt, and baking soda to the mixture
- Beat for another minute until all ingredients are thoroughly incorporated
- Reduce mixer speed to low and gradually add the flour, mixing just until no dry streaks remain
- Using a spatula, fold in the chopped pistachios and white chocolate chips until evenly distributed
- Using a medium cookie scoop (about 2 tablespoons), portion the dough onto the prepared baking sheets, spacing cookies about 2 inches apart
- Bake one sheet at a time in the center of the oven for 8-9 minutes, or until the edges are just turning golden while the centers still look slightly underdone
- Remove from oven and immediately sprinkle with flaked sea salt if desired
