Dive into a creamy bowl of goodness featuring frozen corn, luscious cream cheese, butter, a splash of milk, a hint of sugar, and the gooey meltiness of American cheese. Perfect for the chilly evenings and holiday dinners!
When I was a kid, holidays at our home were chaotic. Aunts, uncles, cousins - the whole shebang. While most folks remember the turkey or the prime rib from their holiday feasts, for me, it was the sides that stole the show. I fondly remember Aunt Mable's secret weapon: her Slow Cooker Creamy Cheesy Corn. Oh, the tales this dish could tell! It witnessed laughter, inevitable family squabbles, and joy. It was this comforting bowl of cheesy corn that brought everyone together around the table, distracting from the burnt pie or the overcooked sprouts. Now, with Aunt Mable's blessings (and a bit of persuasion), I’m sharing the family's star dish with you. Prepare for it to be the main gossip of your next holiday gathering!

Ingredients Notes For Slow Cooker Creamy Cheesy Corn:
Let's talk corn! For this recipe, frozen corn is your trusty friend, providing consistency and ease. If you're looking to go fancy, try finding a sweet or bicolor variety. Cream cheese is the cornerstone of this dish, so it's essential to let it soften for that creamy texture. American cheese brings that nostalgic, ooey-gooey factor but feel free to experiment with others (more on that later). Lastly, that sugar? Don't skip it! It subtly amplifies the corn's natural sweetness.
How To Make Slow Cooker Creamy Cheesy Corn:
Step 1: First things first, grab your 4- or 5-quart slow cooker. Ensure it’s clean and dry because we're about to cook up a storm.
Step 2: Gently combine your star ingredients: frozen corn, softened cream cheese, those adorable butter cubes, water, milk, sugar, and American cheese pieces. Remember, no rough mixing! We're aiming for love and unity, not a food fight.
Step 3: After the heartfelt mixing, cover your slow cooker. Patience is vital here. Set it to low heat. Let the ingredients mingle, dance, and marry for about 3-4 hours.
Step 4: Peek in and give it a gentle stir once in a while. By the end, you should be greeted with a creamy, cheesy, and utterly dreamy corn dish.
Step 5: Serve it hot! Revel in the accolades, and maybe don't mention how easy it was.
Storage Options:
Leftovers? Lucky you! Once cooled, transfer the creamy cheesy corn into an airtight container. It will happily chill in the refrigerator for up to 3-4 days. When you're ready for round two, reheat it on the stove or in the microwave, adding a splash of milk to bring back its creamy glory.
Variations and Substitutions:
For the cheese adventurers: swap American cheese with Monterey Jack, Pepper Jack, or even cheddar for a different flavor profile. Feeling spicy? Add some diced jalapeños or a dash of cayenne. If you want a lighter version, you can cut down on the sugar or use a milk alternative. Fresh corn is a summer blessing; if it's in season, feel free to use it instead of frozen. Remember, Aunt Mable's recipe is just the beginning; let your culinary creativity shine!
