Ingredient Notes
The secret to this Homemade Chili Garlic Sauce lies in its simple yet high-quality ingredients. Each component plays a crucial role in creating the perfect balance of heat, tang, and umami. Here’s a breakdown of what you’ll need and why it matters.
- Fresh Thai Chilies: These little firecrackers bring the heat and vibrant color. If you can’t find Thai chilies, bird’s eye chilies or even serranos work as substitutes.
- Garlic: Fresh garlic cloves add a pungent, aromatic depth that’s essential for that signature chili garlic flavor.
- Vinegar: Rice or white vinegar provides a tangy kick and helps preserve the sauce.
- Light Brown Sugar: A touch of sweetness balances the heat and acidity, creating a harmonious flavor profile.
- Salt: Enhances all the flavors and acts as a natural preservative.
- Neutral Oil: Extra light olive oil or any neutral oil ensures the sauce has a smooth, rich texture without overpowering the other ingredients.
How To Make Homemade Chili Garlic Sauce
Making your own Homemade Chili Garlic Sauce is easier than you think. With just a few simple steps, you’ll have a condiment that rivals any store-bought version. Let’s break it down into easy-to-follow instructions.
- Prep the Ingredients: Start by removing the stems from the Thai chilies and peeling the garlic cloves. Toss them into a food processor along with the salt, sugar, and vinegar. Pulse until everything is finely chopped. This step is where the magic begins—the vibrant colors and aromas will have you hooked already.
- Cook the Mixture: Heat ½ cup of oil in a heavy-bottomed pan over medium heat. Add the chili-garlic mixture and increase the heat to medium-high. Cook for 8-9 minutes, stirring frequently to prevent burning. You’ll know it’s ready when the sauce transforms from a runny pink mixture to a thick, rich red paste.
- Add the Remaining Oil: Once the sauce has thickened, stir in the remaining oil to create a smooth, glossy texture. Turn off the heat and let the sauce cool. This step ensures the sauce has the perfect consistency for drizzling or dipping.
- Store and Enjoy: Transfer the cooled sauce to a clean jar. If you’re not using it within a few days, store it in the fridge to keep it fresh. Pro tip: Label the jar with the date so you can keep track of its shelf life.
Keeping It Fresh: Storage and Reheating Tips for Homemade Chili Garlic Sauce
Once you’ve made this delicious sauce, you’ll want to keep it fresh and flavorful for as long as possible. Store it in an airtight jar in the refrigerator, where it will stay good for up to 2-3 weeks. If you notice any separation, simply give it a good stir before using. For longer storage, you can freeze the sauce in small portions for up to 3 months. To reheat, let it come to room temperature or warm it gently on the stove. Avoid microwaving, as it can alter the texture and flavor.
Variations and Substitutions
One of the best things about this Homemade Chili Garlic Sauce is its adaptability. Whether you’re out of an ingredient or want to experiment with new flavors, here are some ideas to make it your own.
- Chili Variations: Swap Thai chilies for jalapeños, serranos, or even dried chilies for a different heat profile.
- Vinegar Options: Try apple cider vinegar or lime juice for a unique tangy twist.
- Sweetener Swap: Replace brown sugar with honey or maple syrup for a natural sweetness.
- Oil Alternatives: Use avocado oil or grapeseed oil if you prefer a different neutral oil.
- Add-Ins: Experiment with ginger, lemongrass, or even a splash of soy sauce for extra depth.

Recipe Card
Homemade Chili Garlic Sauce
Ingredients
- 1 cup fresh Thai chilies stems removed
- 6 cloves fresh garlic
- 2 tablespoons vinegar rice or white
- 1 tablespoon light brown sugar
- 1 tablespoon salt
- 1½ cups neutral oil such as extra light olive oil
Instructions
- Prepare the Ingredients: Begin by removing the stems from the fresh Thai chilies and peeling the garlic cloves. Place the chilies, garlic, salt, light brown sugar, and vinegar into a food processor. Process the mixture until the ingredients are finely chopped and well combined.
- Cook the Chili-Garlic Mixture: Heat ½ cup of neutral oil in a heavy-bottomed pan over medium heat. Once the oil is warm, add the processed chili-garlic mixture to the pan. Increase the heat to medium-high and cook the mixture for 8 to 9 minutes, stirring frequently to prevent burning. The sauce is ready when it transitions from a runny, pink consistency to a thick, rich red paste, indicating that the water content has evaporated.
- Incorporate the Remaining Oil: Once the mixture has thickened, add the remaining 1 cup of neutral oil to the pan. Stir thoroughly to combine, ensuring the sauce achieves a smooth and glossy texture. Turn off the heat and allow the sauce to cool completely.
- Store the Sauce: Transfer the cooled chili garlic sauce into a clean, airtight jar. If you do not plan to use the sauce within a few days, store it in the refrigerator to maintain freshness. Properly stored, the sauce can last for several weeks.
